Ingredients

  • 1 3/4 c. All-purpose flour
  • 1 tsp Baking pwdr
  • 1/4 tsp Salt
  • 2 tsp Pumpkin pie spice
  • 1 1/2 c. Kellogg's Low Fat Granola cereal, any variety
  • 1/4 c. Firmly packed brown sugar
  • 1/3 c. Skim lowfat milk
  • 3/4 c. Unsweetened applesauce
  • 2 x Egg whites
  • 3 Tbsp. Vegetable oil
  • 1 tsp Vanilla Vegetable cooking spray
  • 1/4 tsp Cinnamon
  • 2 Tbsp. Sugar

  2. 1.Combine flour, baking pwdr, salt and spice. Set aside.
  3. 2.In large mixing bowl, combine Kellogg's Low Fat Granola cereal, brown sugar, lowfat milk and applesauce. Add in egg whites, oil and vanilla to cereal mix. Mix well. Stir in flour mix only till combined. Spoon batter proportionately into twelve, 2 1/2-inch muffin-pan c. coated with cooking spray.
  4. Sprinkle with cinnamon sugar mix.
  5. 3.Bake at 400 F about 20 min or possibly till lightly browned. Serve hot.
  6. YIELD: 12 muffins
