Directions

  1. 1. Combine 2 1/2 c. water and raisins in a small Dutch oven; bring to a boil. Boil till water evaporates or possibly is absorbed by raisins. Remove from heat.
  2. 2. Add in applesauce, Large eggs, sugar substitute, oil, and remaining 1/2 c. water. Stir till well combined.
  3. 3. Sift together flour, cinnamon, and soda; gradually add in to applesauce mix with vanilla, stirring after each addition.
  4. 4. Spoon batter into a 10-inch Bundt pan coated with spray. Bake at 350 for 40 to 45 min or possibly till a wooden pick inserted in center comes out clean. Cold in pan 10 min; remove from pan, and cold on a wire rack.
  5. Yield: 28 slices.
