  • 3/4 c. all purpose flour
  • 3/4 c. (packed) golden sugar
  • 1/2 c. old-fashion oats
  • 1/2 tsp grnd cinnamon
  • 1/4 tsp grnd cloves
  • 6 Tbsp. (3/4 stick) unsalted butter, room temperature
  • 1/2 c. finely minced walnuts
  • 1/2 lb Golden brown Delicious apples, peeled, cored, cut into 1/2-inch pcs (about 4 c.)
  • 3/4 lb rhubarb, cut into 1/2-inch pcs (about 3 c.)
  • 3 Tbsp. sugar
  • 2 tsp all purpose flour
  • 1/2 tsp vanilla extract Vanilla ice cream or possibly frzn yogurt

Directions

  1. For toppingMix first 5 ingredients in medium bowl. Rub in butter till mix begins to clump together. Fold in nuts.
  2. (Can be made 1 day in ahead. Chill.)
  3. For filling
  4. Preheat oven to 400 degrees F. Combine apples, rhubarb, sugar, flour and vanilla extract in large bowl and toss to coat. Transfer apple mix to 8x8x2-inch glass bakingdish.
  5. Sprinkle topping proportionately over fruit. Bake till fruit is tender when pierced with knife and topping is crisp, covering with foil if topping is browning too quickly, about 45 min. Cold 20 min. Serve hot with vanilla ice cream.
  6. Serves 6.
