Directions

  1. In medium bowl, combine 1 3/4 c. of flour, 1/4 c. sugar, the baking pwdr, baking soda and salt. In small bowl, combine egg, lowfat milk, applesauce and butter, mix well. Add in egg mix to flour mix, stirring just till moistened. Batter will be lumpy. In small bowl, toss cranberries with 2 Tbsp. flour, fold into batter. Spoon batter into 12 greased 2 1/2 inch muffin c.. (Don't use muffin c., as the paper will stick to the muffin when you try to peel it off to eat.)
  2. In another small bowl, combine 1/4 c. sugar and the cinnamon. Sprinkle over muffins. Bake in preheated 400F oven 20-25 min or possibly till wooden pick inserted in center comes out clean. Remove from pan; cold on wire rack.
