Alaska Surimi Seafood Quiche Recipe

Ingredients

  • 2 x deep-dish pie shells - (9" dia) unbaked
  • 1 lb Alaska surimi seafood
  • 2 c. shredded Monterey Jack cheese
  • 1 c. minced green leeks">onions or possibly leeks
  • 8 x Large eggs slightly beaten
  • 1 quart half-and-half or possibly lowfat milk
  • 2 Tbsp. sherry if you like Salt to taste Cayenne pepper to taste

Directions

  1. Preheat oven to 400 degrees. Combine Surimi, cheese and green onion in bowl; portion half of mix into each of the pie shells. Mix Large eggs, half-and-half, sherry, salt and pepper. Pour half of mix over ingredients in each shell.
  2. Bake 10 min; reduce heat to 350 degrees. Continue baking 40 to 45 min or possibly till knife inserted near center comes out clean. Let stand 5 min before slicing.
  3. This recipe yields 2 quiches.
  4. Yield: 2 quiches
