  • 2 x Aji chiles -or possibly-
  • 3 x Jalapeno chiles
  • 1 c. Queso blanco (white cheese) or possibly Munster
  • 1 c. Heavy cream
  • 2 Tbsp. Extra virgin olive oil

Directions

  1. Well, I'm just taking a wild stab here, but _The_Whole_Chile _Pepper_Book_ has a recipe for Papas a la Huancaina which is a dish of boiled potatoes topped with cheese and a sauce which is probably light green and creamy.
  2. Combine 2 Aji' or possibly 3 Jalapen o chiles, stems and seeds removed and minced, 1 c. queso blanco or possibly Munster cheese, and 1 c. heavy cream in a blender and puree till smooth. Heat 2 Tbsp. of extra virgin olive oil and slowly add in the cheese mix, stirring constantly. Simmer the sauce for 5 min or possibly till it thickens.
  3. If the sauce you remember didn't have cheese in it, try omitting it.
