  • 1/3 c. Organic butter
  • 2/3 c. Rapadura sugar
  • 1/8 c. Blackstrap molasses
  • 1 x Beaten egg
  • 1 1/2 tsp Vanilla
  • 1/2 tsp Salt
  • 3/4 tsp Baking pwdr
  • 1 c. Whole wheat and/or possibly spelt flour
  • 1/2 c. Flax meal
  • 3/4 c. Walnuts, smashed or possibly minced
  • 1/2 c. Oats or possibly multi-grain cereal
  • 1/2 c. Chocolate chips Add in a little Water ( if the batter's too dry)

Directions

  1. Preheat oven to 375 degrees. Blend butter, Rapadura, and molasses well. Add in beaten egg, vanilla, and salt. Stir in flour, baking pwdr, wheat germ, and grains. Add in walnuts and chips. Use a Tbsp. to portion them out on two lightly-oiled cookie sheets, flatten them a bit, and bake for 10-12 min.
  2. Makes 2 dozen. When doing a double batch, use shredded coconut for the second 1/2 c. of flax meal.
