Directions

  1. Combine shrimp, coconut, onion and salt. Spoon mix into each vegetable leaf and wrap mix. Arrange in pot and pour 1 c. coconut lowfat milk over wrapped mix. Cover and simmer for about 20 min. When almost done, add in 1 more c. of coconut lowfat milk and warm peppers.
  2. Serves 3.
