  • 1/3 c. Pineapple preserves
  • 1/4 c. Finely minced red bell pepper
  • 2 Tbsp. Finely minced red onion
  • 1 Tbsp. Seeded finely minced jalapeno Pper Pepper
  • 1 tsp Dry mint flakes
  • 1/8 tsp Salt
  • 2 Tbsp. Fresh lime juice
  • 8 ounce Unsweetened pineapple tidbits, (1 N) drai ined
  • 1 tsp Vegetable oil
  • 1 lrg Garlic clove, chopped
  • 4 x Halibut steaks, (4-oz) (3/4 inch thick)
  • 1/4 tsp Salt Vegetable cooking spray Lime wedges, (optional) Cilantro sprigs, (optional)

Directions

  1. Combine the first 8 ingredients in a bowl; stir well. Set salsa aside.
  2. Combine oil and garlic; brush over fish. Sprinkle 1/4 tsp. salt over fish; set aside.
  3. Prepare grill or possibly broiler. Place fish on grill rack or possibly broiler pan coated with cooking spray, and cook 3 min on each side or possibly till fish flakes easily when tested with a fork.
  4. Yield: 4 servings (serving size: 3 ounces fish and 1/4 c. salsa).
  5. NOTES : Spoon the salsa over the fish. Serve with lime wedges, and garnish with cilantro sprigs, if you like.
