Orange Chipotle Vinaigrette by Bob VincentThis recipe is adapted from one by Julie Campoy in her book Julienne. I made some changes to it. I added garlic, used more honey and reduced 50% more orange juice. I also added Mexican oregano and cut back on the cumin a bit. This produces a thin vinaigrette. Chocolate Tapioca Pudding by Salad FoodieTake old-fashioned tapioca pudding to a grand level for a special Valentine dessert - add chocolate! Be patient as you cook the pudding, it can take 20 to 30 minutes of stirring to melt the chocolate and reach proper consistency without scorching. The pudding will thicken as it cools. |

Sweet Zucchini Pickles by Salad FoodieToo many zucchini - what to do? A recipe by Chuck Allen (Palm Springs) caught my eye. Expectations are high from this retired chef, so he takes this recipe as a hostess gift. It is as colorful as it is delicious and lasts about 6 weeks refrigerated. The only thing I added was small cauliflowerettes. What an attractive conversation… |

Mashed Potatoes by Candice GoodyearI don't like instant mashed potatoes at all. I make mine from scratch like many cooks out there. I like them either with butter and sour cream or butter and milk in them both are delicious. But, if you don't have milk or sour cream on hand you can substitute 1/4 cup real mayo, still taste great. |
