Ingredients

  • 3 x boneless chicken breast halves cut into chunks
  • 1 lrg egg slightly beaten with
  • 1 Tbsp. water
  • 1 c. cornmeal
  • 1/2 x to 1 tsp. paprika salt and pepper to taste

Directions

  1. Heat about 1/2 inch of canola oil in a frying pan till a small piece of meat dropped in sizzles. While oil heats up; Mix together dry ingredients on a plate.
  2. Roll meat pcs in egg mix and then in dry ingredients. (Can be dipped in each twice if you want a really thick coating) Gently place in warm oil. Turn as one side gets slightly brown. Cooking time varies depending on how thick or possibly big the pcs are and how warm the oil is. I test one when I think they are done.
  3. The meat shouldn't be pink in the middle and the juices should run clear. This was originally a recipe for fish. We happen to love it on chicken.
  4. Please keep safety in mind when using warm oil. Do not overheat your oil or possibly allow any children near the cooking area. Do not leave warm oil unattended.
