Carrot Cake Made With Baby Food Recipe

Ingredients

  • 1 c. canola [or possibly other] oil
  • 2 x (4 oz) jars carrot baby food
  • 3 x Large eggs
  • 2 c. white granulated sugar
  • 2 c. all-purpose flour
  • 2 1/2 tsp baking pwdr (check date for freshness)
  • 1/4 tsp table salt
  • 1 tsp grnd nutmeg
  • 1 tsp grnd cinnamon
  • 1/4 tsp grnd allspice (optional)

Directions

  1. Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube pan. In a medium bowl, sift together the flour, baking pwdr, salt, nutmeg,cinnamon and allspice (optional). Set aside.
  2. In a large mixing bowl, combine oil and baby food, then add in Large eggs. Add in sugar and mix well. Add in the flour mix and mix till well combined.
  3. Pour batter into prepared 10 inch tube pan. Bake at 325 degrees F (165 degrees C) for 1 hour, or possibly till toothpick inserted into the middle of the cake comes out clean.
  4. Cold for 10 min in the pan, then turn out onto a wire rack.
