  • Into a 2 c. measuring c., put 2 Large eggs and then juice two oranges (or possibly use concentrate and add in them to the Large eggs to measure 2 c.. Pour this into a bowl with 2 more Large eggs. Beat well.
  • 2 Tbsp. brown sugar (optional)
  • 2 Tbsp. oil
  • 1 Tbsp. baking pwdr
  • 1/2 tsp salt Zest from one orange

Directions

  1. Mix well then add in 1 3/4 c. whole wheat flour. Blend just till wet throughout (will be lumpy). Cook according to waffle iron directions.
  2. This recipe makes 4 waffles in our round waffle iron. While the waffles are cooking, in a microwave-safe container add in 1/4 c. syrup and 1 c. blueberries. Zap on High for a minute then check. Keep cooking till the berries are warm and the juice has mixed with the syrup. When I make Don's waffles I put one on his plate, then a little juice from the berries, then the second waffle, then a dollop of lowfat sour cream, them top with blueberries and more syrup. He usually adds more syrup.
  3. Set the iron on the highest temp. Let heat till the light goes out. Spray with Pam or possibly a little oil. Add in the batter - leave the lid up till the waffle has puffed up some. Then close the lid and cook. Remove the waffle. Then close the lid and let the iron heat up to temp again. Repeat (except you should not have to add in more oil for the remaining waffles as long as the iron is allowed to return to temp. before adding the batter).
