%20to%20make%201%20pound%20of%20cheese?%3C/p%3E%3Cp%3EIt's%20true.%20Wisconsin%20dairy%20farms%20produce%20more%20than%2023%20billion%20pounds%20of%20milk%20every%20year.%20That's%20about%2014%25%20of%20the%20country's%20total%20milk%20supply.As%20the%20nation's%20leading%20producer%20of%20cheese,%20Wisconsin%20has%20a%20long%20and%20productive%20history,%20which%20hearkens%20back%20to%20the%20mid-1800s.%3C/p%3E%3Cp%3EWe%20were%20fortunate%20to%20have%20been%20invited%20to%20a%20special%20tasting%20of%20some%20delicious%20Wisconsin%20cheeses%20at%20Bacchus%20restaurant%20in%20downtown%20Milwaukee.%20With%20an%20emphasis%20on%20fresh%20seafood,%20exquisite%20handmade%20pastas,%20and%20perfectly%20grilled%20meats,%20Bacchus%20serves%20up%20some%20of%20the%20best%20in%20high%20end%20dining%20in%20Milwaukee.%20They%20also%20happen%20to%20serve%20an%20amazing%20selection%20of%20Wisconsin%20Cheeses.%3C/p%3E%3Cp%3EOur%20cheese%20plate%20was%20served%20with%20fabulous%20acacia%20honey,%20imported%20from%20Germany,%20and%20a%20delicious%20fig%20preserves%20--%20both%20of%20which%20were%20perfect%20when%20served%20with%20the%20creamy%20blue%20cheese.%3C/p%3E%3Cp%3EAs%20we%20noshed%20on%20each%20delicious%20variety%20of%20cheese,%20we%20chatted%20with%20one%20of%20the%20dinners%20hosts,%20Heather%20Porter%20Engwall%20of%20the%20Wisconsin%20Milk%20Marketing%20Board.%20She%20had%20plenty%20of%20great%20stories%20to%20share%20--%20both%20about%20the%20history%20of%20Wisconsin%20cheeses,%20and%20about%20the%20phenomenal%20cheese-makers%20whose%20ingenuity%20has%20helped%20Wisconsin%20to%20become%20the%20overwhelming%20leader%20in%20artisan%20cheese.%20She%20pretty%20much%20has%20the%20coolest%20gig%20in%20the%20world.%3C/p%3E%3Cp%3EOne%20of%20our%20favorite%20cheeses,%20Bandaged%20Cheddar,%20hails%20from%20Bleu%20Mont%20Dairy,%20where%20Willi%20Lehner,%20a%20Swiss-American%20cheesemaker%20brings%20astounding%20creativity%20to%20the%20art%20of%20cheese.%3C/p%3E%3Cp%3EHis%20modest%20farm%20operates%20solely%20on%20solar-%20and%20wind-power.%20His%20bandaged%20cheddar,%20which%20as%20the%20name%20suggests,%20is%20wrapped%20in%20bandages,%20then%20spritzed%20with%20a%20mixture%20of%20water%20and%20previous%20rinds%20before%20being%20aged%20on%20special%20spruce%20boards%20in%20an%20aging%20cave.%20The%20cheese%20is%20unlike%20many%20other%20cheddars%20you've%20probably%20tasted.%20The%20flavor%20is%20curiously%20gamey%20--%20and%20yet%20it%20offers%20up%20plenty%20of%20welcome%20buttery%20nuttiness%20and%20a%20very%20clean%20finish.%3C/p%3E%3Cp%3EIn%20addition%20to%20our%20cheese%20plate,%20we%20were%20delighted%20to%20sample%20a%20selection%20of%20tapas,%20including%20a%20delicious%20toasted%20brioche%20with%20maple%20braised%20pork%20belly.%3C/p%3E%3Cp%3EWe%20sampled%20a%20delightful%20veal%20ravioli%20with%20spinach,%20toasted%20pine%20nuts,%20and%20buerre%20fondue.%3C/p%3E%3Cp%3EA%20chilled%20corn%20soup%20was%20garnished%20with%20Maine%20lobster,%20creamy%20avocado,%20and%20sweet%20piquillo%20peppers.%3C/p%3E%3Cp%3EThere%20was%20also%20beet%20and%20watermelon%20salad%20with%20crisp%20proscuitto,%20arugula,%20Marcona%20almonds,%20and%20a%20delicious%20sampling%20of%20Hidden%20Springs%20goat%20cheese.%3C/p%3E%3Cp%3EAnd%20we%20both%20delighted%20in%20a%20farm-fresh%20string%20bean%20salad%20featuring%20Salemville%20blue%20cheese,%20frisee,%20radishes,%20and%20toasted%20hazelnuts.%3C/p%3E%3Cp%3EFor%20dinner,%20I%20ordered%20the%20Strauss%20free-raised%20veal%20chop,%20which%20came%20with%20a%20baby%20potato%20salad%20dressed%20in%20a%20rustic%20mustard%20vinaigrette%20and%20served%20with%20veal%20jus.%3C/p%3E%3Cp%3ELo%20was%20delighted%20with%20her%20seared%20sea%20scallops,%20which%20were%20served%20on%20a%20bed%20of%20caramelized%20fennel%20and%20sauteed%20spinach,%20and%20dressed%20with%20a%20honey-red%20wine%20sauce%20and%20red%20grapes.%3C/p%3E%3Cp%3EIt's%20difficult%20enough%20to%20describe%20the%20incredible%20satiety%20one%20feels%20after%20imbibing%20in%20such%20a%20delicious%20array%20of%20food%20and%20drink,%20but%20we%20were%20also%20privileged%20to%20enjoy%20great%20conversation%20with%20a%20wide%20array%20of%20great%20people.%3C/p%3E%3Cp%3EWe%20had%20the%20incredible%20good%20fortune%20of%20being%20joined%20by%20a%20variety%20of%20other%20Milwaukee%20foodies%20--%20including%20Mel%20from%20A%20Taste%20of%20Life,%20Stef%20and%20Katie%20from%20Haute%20Apple%20Pie,%20and%20the%20crew%20from%20Eating%20Milwaukee.%20We%20were%20able%20to%20chat%20briefly%20with%20Executive%20Chef,%20Adam%20Siegel,%20who%20spoke%20honestly%20about%20both%20the%20wonders%20and%20limitations%20of%20his%20efforts%20to%20source%20as%20many%20local%20foods%20as%20possible%20to%20accommodate%20his%20dinner%20guests%20at%20Bacchus.%3C/p%3E%3Cp%3EThank%20you,%20thank%20you%20to%20Adam%20Siegel,%20Chef%20de%20Cuisine%20Andrew%20Ruiz%20and%20all%20the%20others%20on%20staff%20at%20Bacchus%20who%20made%20our%20dinner%20truly%20memorable.%20And%2
