%20spring%20cleaning%20a%20few%20weeks%20ago%20I%20took%20all%20of%20my%20cook%20books%20off%20the%20shelves%20and%20dusted%20%E2%80%93%20as%20I%20should.%3C/p%3E%3Cp%3EThen%20I%20decided%20I%20should%20look%20at%20them%20all.%20I%20hadn%E2%80%99t%20looked%20at%20some%20in%20years.So,%20in%20the%20evenings,%20during%20our%2090%20minutes%20of%20TV%20time,%20I%20chose%20a%20book%20and%20flip%20through%20it.%3C/p%3E%3Cp%3EThe%20first%20one%20was%20%E2%80%98Vegetables%20from%20Amaranthe%20to%20Zucchini%E2%80%99%20by%20Elizabeth%20Schneider.%20It%E2%80%99s%20a%20big%20(over%20700%20pages)%20reference%20book%20and%20it%E2%80%99s%20wonderful.%3C/p%3E%3Cp%3EAnd%20I%20was%20reminded%20of%20how%20to%20cook%20white%20asparagus.%3C/p%3E%3Cp%3EShe%20even%20gives%20a%20good%20explanation%20of%20why%20other%20methods%20of%20cooking%20will%20cause%20white%20asparagus%20to%20turn%20bitter.%20I%E2%80%99m%20not%20going%20to%20go%20into%20the%20details%E2%80%A6.%20Just%20trust%20me%20on%20this%20one.%3C/p%3E%3Cp%3EThis%20was%20the%20best%20white%20asparagus%20we%E2%80%99ve%20had.%3C/p%3E%3Cp%3ERemember:%20white%20asparagus%20is%20very%20brittle%20so%20handle%20with%20care.%20One%20does%20not%20%E2%80%98snap%E2%80%99%20the%20ends%20off%20as%20there%20would%20be%20way%20too%20much%20wasted.%20It%20absolutely%20has%20to%20be%20peeled%20and%20be%20aggressive%20when%20peeling.%3C/p%3E%3Cp%3EWhite%20Asparagus%20with%20Green%20Garlic%3C/p%3E%3Cp%3ETotal%20time:%2030%20minutes%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EInstructions:%3C/p%3E%3Cp%3ECut%20off%20ends%20of%20asparagus%20by%20making%20thin%20slices%20until%20the%20knife%20goes%20through%20easily..%3C/p%3E%3Cp%3ELay%20asparagus%20flat%20and,%20using%20a%20vegetable%20peeler,%20peel%20from%20just%20below%20the%20tip%20to%20the%20bottom%20until%20all%20the%20stringy%20bits%20are%20gone.%3C/p%3E%3Cp%3EFill%20a%20large%20pot%20half%20full%20of%20water.%20Add%20sugar,%20salt,%20lemon%20juice%20and%20bring%20to%20a%20boil.%3C/p%3E%3Cp%3EAdd%20asparagus%20and%20boil%20gently%20for%2012%20%E2%80%93%2018%20minutes,%20depending%20on%20size.%20Use%20a%20tongs%20to%20grab%20a%20spear%20and%20test%20with%20a%20sharp%20knife.%20The%20knife%20should%20go%20in%20easily.%3C/p%3E%3Cp%3EWhen%20done%20remove%20asparagus%20(tongs)%20to%20a%20plate.%3C/p%3E%3Cp%3EEmpty%20pan%20and%20return%20to%20low%20heat.%3C/p%3E%3Cp%3EAdd%20butter,%20green%20garlic%20and%20fry%20gently%20until%20green%20garlic%20is%20tender..%3C/p%3E%3Cp%3EAdd%20asparagus%20and%20turn%20asparagus%20to%20coat.%3C/p%3E%3Cp%3ERemove%20to%20a%20small%20platter,%20add%20pepper%20and%20serve.%3C/p%3E%3Cp%3ESpeaking%20of%20books%E2%80%A6.%3C/p%3E%3Cp%3EWay%20back%20in%20the%20beginning%20of%20time,%20while%20we%20were%20still%20living%20in%20Minnesota,%20I%20started%20reading%20a%20fantasy%20series:%20%E2%80%98The%20Wheel%20of%20Time%E2%80%99,%20by%20Robert%20Jordan.%20It%20was%20supposed%20to%20be%20a%20six%20volume%20series%20and%20the%20first%20book%20was%20published%20in%201990.%20I%20started%20reading%20it%20in%201995.%3C/p%3E%3Cp%3EI%20read%20the%20first%20four%20or%20five,%20all%20that%20had%20been%20published,%20and%20then%20decided%20to%20wait%20for%20the%20finish.%3C/p%3E%3Cp%3EA%20few%20more%20were%20published%20and%20I%20thought%20it%20must%20be%20finished%20soon,%20so,%20as%20I%20usually%20do%20when%20reading%20a%20series,%20I%20reread%20all%20of%20the%20ones%20I%20had%20and%20then%20read%20three%20more%E2%80%A6.%20Eight%20in%20total.%3C/p%3E%3Cp%3EThe%20series%20still%20wasn%E2%80%99t%20finished.%3C/p%3E%3Cp%3EI%20set%20them%20aside%20again.%3C/p%3E%3Cp%3EThen,%20in%202007,%20the%20author%20died.%3C/p%3E%3Cp%3EBefore%20he%20died%20he%20outlined%20and%20made%20copious%20notes%20as%20to%20how%20the%20series%20was%20to%20end.%3C/p%3E%3Cp%3EAnother%20writer%20was%20found%20to%20finish%20the%20work.%3C/p%3E%3Cp%3EIn%202013%20the%20final%20book%20was%20published.%3C/p%3E%3Cp%3EA%20year%20ago%20I%20decided%20it%20was%20time.%20I%20bought%20the%20rest%20of%20the%20series%20and,%20once%20again,%20started%20reading%20from%20the%20beginning,%3C/p%3E%3Cp%3EIt%E2%80%99s%20no%20small%20undertaking%E2%80%A6.%20Each%20book%20is%20between%20800%20and%201000%20pages%20and%20there%20are%20fifteen%20of%20them.%3C/p%3E%3Cp%3EI%E2%80%99m%20finally%20down%20to%20the%20last%20two.%20The%20middle%20few%20books%20were%20very%20slow%20and%20I%20did%20a%20bit%20of%20skimming.%20Plus%20I%E2%80%99ve%20read%20a%20few%20other%20books%20in%20between.%3C/p%3E%3Cp%3E20%20years%20after%20I%20started%20I%20will%20finally%20know%20how%20it%20all%20ends%E2%80%A6.%3C/p%3E%3Cp%3EI%20don%E2%80%99t%20believe%20I%E2%80%99ll%20read%20it%20again.%3C/p%3E%3Cp%3EAnyone%20want%20a%20complete%20set?%3C/p%3E%3Cp%3EI%20started%20reading%20another%20series%20a%20few%20years%20before%20I%20started%20this%20one%E2%80%A6.%20It%E2%80%99s%20still%20not%20finished%20and%20there%20is%20no%20final%20book%20in%20sight.%3C/p%3E%3Cp%3EI%20no%20longer%20start%20any%20series%20unless%2
