Ingredients

  • 15 lbs turkey meat
  • 4 jars adobo chipotle sauce
  • 1 gal diced onions
  • 10 lbs diced peppers/mixed (reserve 3 lbs)
  • 10 lbs cheese, shredded
  • 12 fresh cilanto, minced
  • 1 cup chopped garlic
  • 1 cup oil
  • 1 can green chilies
  • 200 each tortillas

Directions

  1. Saute diced onions in oil until translucent. Add green chilies and garlic and cook for 5 minutes. Hold.
  2. Saute turkey meat with 1 quart of adobo sauce until cooked through.
  3. Quick saute 7 lbs of the chopped peppers.
  4. Combine the turkey mixture with the onion, chilies, and garlic mix, the cooked peppers, and cilantro.
  5. In an open tortilla, plcce a layer of cheese and about 5 ounces of above mix.
  6. Make certain cheese and mix covers tortilla.
  7. Rol up the tortilla and place seam side down in a pan with some adobo sauce on the bottom.
  8. Pack them tight; drizzle with additional sauce, sprinkle some diced peppers and cheese on top and bake to heat through.
  9. The mix can be prepped one day in advance. Assembly must take place day of service.
