• OVEN BAKED ONION RINGS WITH CUMIN DIPPING SAUCE
• For the onion:
• 1 large yellow onion, peeled and cut in rounds 1/2 inch thick
• 1/2 cup unbleached flour
• 1/2 teaspoon paprika
• 1/8 teaspoon salt
• 1/8 teaspoon pepper
• 1/2 teaspoon ground cumin
• 1/2 teaspoon ground coriander
• 1 cup heavy cream
• 1/2 teaspoon corn starch or cream of tartar
• For the dipping Sauce:
• 2 tablespoons mayonnaise
• 1/2 cup sour cream
• 1/4 teaspoon coriander
• 1/2 teaspoon cumin
• 1 tablespoon lemon juice
• Splash of Tabasco
• Salt and pepper
