- 3 extra-large whole eggs
- 8 extra-large egg yolks
- 4 cups half-and-half
- 1/4 cup pure maple syrup
- 3/4 cups sugar
- 1 tsp pumpkin pie spice
- 1/2 tsp ground cinnamon
- a pinch of salt
- 1 1/2 teaspoons pure vanilla extract
- 6 croissants cut into chunks, preferably stale
