  • 3/4 cup fresh lime juice about 6-12 limes
  • 1/4 cup sugar
  • 2 tbsp salt
  • 1 tbsp hot sauce
  • 1 tbsp fish sauce
  • 1 small red onion thinly sliced
  • 1 1/2 lbs cucumbers peeled seeded and slided
  • 1 tbsp chopped fresh mint
  • 1 tbsp cilantro or parsley

Directions

  1. at least two hours prior to serving combine the lime juice, sugar, salt hot sauce fish sauce in a small bowl. Add the red onion and mix well Refrigerate for at least 2 hours or overnight
  2. Lift the onions out of the dressing and combine them with the cucumber, mint and cilantro/parsley in meidum bowl. spoon a few tbsp of dressing, mix and season to taste with more dressing, salt or hot sauce. reserve the remaining dressing.
