%20our%20wine%20group%20agreed%20that%20Cindy%20Pawlcyn%20and%20her%20crew%20are%20experts%20in%20preparing%20pork.%20%20Their%20BBQ%20Baby%20back%20ribs%20are%20marvelous%20and%20the%20Mongolian%20pork%20chops%20with%20braised%20red%20cabbage%20has%20been%20a%20signature%20dish%20for%20many%20years.%20%20Fortunately%20for%20us,%20the%20Mustards%20Grill%20Napa%20Valley%20Cookbook%20was%20published%20in%202001%20and%20it%20remains%20a%20favorite%20until%20today.%3C/p%3E%3Cp%3EIt%20is%20SOME%20COOKBOOK!%20%20Our%20wine%20group%20has%20used%20it%20many%20times:%20%20Hanger%20steak%20with%20watercress%20sauce%20and%20Onion%20jam%20at%20Jeff%20and%20Doris%E2%80%99%20was%20to%20die%20for%20and%20the%20Crab%20cakes%20with%20red%20beet%20and%20horseradish%20remoulade%20and%20Seared%20Ahi%20tuna%20on%20sesame%20crackers%20with%20wasabi%20cream%20are%20brilliant%20appetizers.%20%20Brian%20and%20Helen%20have%20mastered%20the%20Mongolian%20pork%20chops.%20%20Strawberry-rhubarb%20cobbler%20with%20black%20pepper%20biscuits%20topped%20with%20Caramel%20ice%20cream,%20and%20Lemon-lime%20meringue%20pie%20(with%20it%E2%80%99s%20sky%20high%20brown%20sugar%20meringue)%20are%20most%20impressive%20%E2%80%93%20just%20ask%20Nina!%20%20Being%20a%20person%20who%20doesn%E2%80%99t%20partake%20of%20dessert%20very%20often,%20she%20scarfed%20a%20generous%20slice%20of%20the%20pie%20down%20in%20no%20time%20and%20we%E2%80%99ll%20never%20let%20her%20forget%20it!%3C/p%3E%3Cp%3ESlow-Smoked%20BBQ%20Pork%20Sandwiches%20with%20Ooo-Eee!%20Sauce%20is%20a%20great%20recipe%20that%20requires%20the%20meat%20to%20be%20smoked%20over%20a%20period%20of%20several%20hours.%20%20Having%20endured%20unusually%20frigid%20temperatures%20in%20Houston%20of%20late,%20setting%20up%20the%20smoker%20was%20out%20of%20the%20question!%20%20I%20opted%20to%20slow-roast%20it%20in%20the%20oven%20and%20was%20rewarded%20with%20sweet,%20juicy%20and%20very%20tender%20meat%20that%20took%20no%20effort%20to%20pull%20apart.%20%20Apply%20the%20seasoning%20rub%20the%20night%20before%20you%20plan%20to%20roast%20it,%20if%20possible.%20%20Slow-Roasted%20BBQ%20Pork%20Sandwiches%20with%20Ooo-Eee!%20Sauce%20and%20Sweet-and-Sour%20Coleslaw%20adapted%20from%20the%20Mustards%20Grill%20Napa%20Valley%20Cookbook%3C/p%3E%3Cp%3E6%20seeded%20bread%20rolls%3C/p%3E%3Cp%3ESweet-and-Sour%20Coleslaw%20(see%20recipe%20below)%3C/p%3E%3Cp%3ELay%20the%20pork%20butt%20skin%20side%20up%20on%20a%20cutting%20board.%20Using%20a%20sharp%20knife,%20cut%20the%20skin%20off%20the%20pork%20butt%20through%20the%20fatty%20layer%20dividing%20the%20skin%20and%20the%20meat.%20Set%20the%20skin%20aside.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20combine%20the%20orange%20peel,%20black%20pepper,%20ancho%20chile%20powder,%20sweet%20paprika,%20hot%20paprika,%20kosher%20salt%20and%20sugar.%20Rub%20this%20mixture%20liberally%20on%20the%20pork,%20using%20your%20fingers%20to%20push%20the%20seasonings%20into%20all%20the%20crevices%20and%20indentations%20by%20the%20bone.%20Replace%20the%20pork%20skin%20on%20the%20meat%20and%20season%20it%20as%20well.%20Cover%20the%20meat%20and%20refrigerate%20for%20at%20least%204%20hours,%20or%20preferably%20overnight.%3C/p%3E%3Cp%3ETo%20slow-roast:%20Preheat%20the%20oven%20to%20400%C2%BAF.%20Place%20the%20pork%20butt%20in%20a%20heavy%20roaster%20which%20is%20just%20big%20enough%20to%20fit%20the%20roast.%20You%20want%20the%20roast%20to%20fit%20snugly%20in%20the%20roaster%20so%20that%20the%20moisture%20is%20not%20dispersed%20too%20much.%20Cover%20roaster%20with%20the%20lid%20and%20place%20in%20the%20oven.%20Immediately%20reduce%20the%20temperature%20to%20225%C2%BAF%20and%20allow%20the%20meat%20to%20roast%20for%20about%205-7%20hours.%20You%20can%20even%20do%20this%20overnight.%3C/p%3E%3Cp%3EDuring%20the%20last%20hour%20of%20roasting,%20remove%20the%20lid%20and%20allow%20the%20pork%20skin%20to%20crisp.%20Remove%20from%20the%20oven%20and%20test%20for%20doneness:%20prick%20the%20meat%20with%20a%20fork%20and%20twist%20the%20fork.%20If%20the%20meat%20falls%20apart,%20it%20is%20done!%20Allow%20the%20meat%20to%20cool%20for%20a%20little%20while%20and%20then%20pull%20it%20apart,%20removing%20any%20fatty%20parts%20that%20have%20not%20melted%20away.%3C/p%3E%3Cp%3ETowards%20serving%20time,%20combine%20all%20the%20sauce%20ingredients%20in%20a%20large%20skillet%20over%20medium%20heat.%20Cook%20until%20it%20is%20slightly%20thickened.%20Carefully%20add%20the%20pulled%20pork%20pieces%20to%20the%20sauce%20and%20stir%20together%20to%20coat%20the%20meat.%3C/p%3E%3Cp%3ETo%20assemble%20the%20sandwich:%20Cut%20the%20bread%20rolls%20open%20and%20remove%20some%20of%20the%20soft%20bread%20inside%20(this%20will%20provide%20a%20nice%20%E2%80%98nest%E2%80%99%20for%20the%20meat).%20Toast%20the%20rolls.%20Scoop%20a%20generous%20amount%20of%20pork%20on%20one%20toasted%20half%20of%20a%20roll,%20top%20with%20sliced%20onions,%20Sweet-and-Sour%20Coleslaw,%20and%20top%20with%20the%20other%20half%20of%20the%20roll.%20You%20can%20also%20serve%20the%20coleslaw%20on%20the%20side,%20if%20you%20prefer.%3C/p%3E%3Cp%3ESweet-and-Sour%20Coleslaw%3C/p%3E%3Cp%3E%C2%BD%20to%20%C2%BE%20head%20of%20red%20or%20green%20cabbage,%20thinly%20sliced%3C/p%3E%3Cp%3E1%20red%20bell%20pepper,%20seeded%20and%20thinly%20sliced%3C/p%3E%3Cp%3E2%20carrots,%20peeled%20and%20grated%3C/p%3E%3Cp%3E%C2%BC%20cup%20sugar%3C/p%3E%3Cp%3E1%20teaspoon%20dry%20mustard%3C/p%3E%3Cp%3E1%20teaspoon%20salt%3C/p%3E%3Cp%3E%C2%BC%20teaspoon%20freshly%20ground%20black%20pepper%3C/p%3E%3Cp%3E1/3%20cup%20cider%20vinegar%3C/p%3E%3Cp%3E2/3%20cup%20extra%20virgin%20olive%20oil%3C/p%3E%3Cp%3ECombine%20sliced%20cabbage,%20bell%20pepper%20and%20carrots%20in%20a%20large%20bowl.%20To%20make%20the%20dressing,%20combine%20the%20sugar,%20mustard,%20salt%20and%20pepper%20in%20a%20small%20saucepan.%20Gradually%20whisk%20in%20vinegar%20and%20olive%20oil.%20Bring%20to%20a%20boil%20over%20medium%20heat%20and%20cook%20for%201%20minute.%20Cool%20for%20about%205%20minutes%20and%20then%20pour%20the%20dressing%20over%20the%20cabbage%20mixture.%20Refrigerate%20until%20ready%20to%20be%20served.%3C/p%3E%3Cp%3EPrijatno!%3C/p%3E){kind=link}
