Slow Cooker Tortilla Soup Recipe

Ingredients

• 1/2 pound boneless skinless chicken breast, cut into bite-sized pieces
• 1 15-oz. (-ish) can diced tomatoes with chiles
• 1 green pepper, diced
• 1 large onion, diced
• 1 1/2 cups fresh or frozen corn kernels (no need to thaw)
• 1 clove garlic, minced
• 2 1/2 cups chicken broth
• 1/2 teaspoon cumin
• 1/2 teaspoon chili powder
• 1/2 teaspoon salt
• 1/4 teaspoon pepper
• 6 6-inch corn tortillas
• olive oil
• chopped cilantro
• shredded sharp cheddar cheese
