Secret Recipe Club: Applesauce Cookies with Browned Butter Icing Recipe
Ingredients
- Applesauce Cookies:
- 1 cup butter
- 2 cups packed brown sugar
- 2 eggs
- 2 cups unsweetened applesauce
- 3½ cups flour
- 1 cup dried cherries, roughly chopped
- 1 cup chopped walnuts
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- Browned Butter Icing:
- 5 tbsp butter
- 3 tbsp heavy cream
- 1 tsp vanilla paste (or 1½ tsp vanilla extract)
- 2½ cups icing sugar

%3C/p%3E%3Cp%3EAnna%20adapted%20these%20from%20a%20Betty%20Crocker%20recipe,%20and%20while%20she%20already%20made%20quite%20a%20few%20tweaks%20to%20the%20original,%20I%20couldn%E2%80%99t%20resist%20making%20a%20few%20more%20changes%20of%20my%20own.%3C/p%3E%3Cp%3EThe%20version%20on%20Anna%E2%80%99s%20blog%20had%20lots%20of%20cinnamon%20and%20clove%20and%20nutmeg,%20but%20I%20wanted%20something%20a%20little%20lighter%20and%20subtler%20for%20spring,%20so%20I%20omitted%20the%20cloves%20and%20trimmed%20down%20the%20cinnamon.%20I%20also%20replaced%20the%20golden%20raisins%20in%20her%20version%20with%20dried%20cherries,%20because%20I%20don%E2%80%99t%20particularly%20like%20raisins%20in%20my%20cookies,%20subbed%20butter%20for%20shortening%20(because,%20butter),%20and%20threw%20in%20some%20chopped%20walnuts%20for%20good%20measure.%20%20And%20then,%20just%20for%20the%20heck%20of%20it,%20I%20used%20vanilla%20paste%20in%20the%20frosting%20to%20give%20it%20those%20lovely%20black%20speckles.%3C/p%3E%3Cp%3EThe%20result%20is%20a%20sweet%20treat%20that%20falls%20somewhere%20between%20a%20dense%20muffin%20and%20a%20cakey%20cookie,%20and%20that%20(more%20importantly)%20is%20perfectly%20designed%20for%20transporting%20browned%20butter%20icing%20into%20your%20mouth.%3C/p%3E%3Cp%3EAs%20for%20the%20icing,%20it%20should%20probably%20be%20classified%20as%20a%20controlled%20substance,%20because%20this%20stuff%20is%20seriously%20addictive.%20In%20fact,%20the%20only%20thing%20stopping%20me%20from%20shoveling%20the%20entire%20bowl%20into%20my%20mouth%20with%20a%20spoon%20was%20the%20fact%20that%20I%20had%20several%20dozen%20fresh-baked%20cookies%20cooling%20on%20the%20counter,%20and%20I%20didn%E2%80%99t%20have%20enough%20powdered%20sugar%20to%20make%20another%20batch%20of%20icing.%3C/p%3E%3Cp%3EWell,%20that%20and%20the%20stomachache%20and%20weight%20gain%20that%20would%20have%20surely%20ensued.%3C/p%3E%3Cp%3EAt%20least%20this%20way%20I%20get%20to%20pretend%20it%20was%20okay,%20because%20the%20icing%20is%20on%20top%20of%20a%20cookie%20made%20with%20healthy%20things%20like%20applesauce%20and%20dried%20fruit%20and%20nuts.%20(And%20yes,%20a%20lot%20of%20brown%20sugar%20and%20butter,%20too.%20But%20that%E2%80%99s%20irrelevant,%20because%20everyone%20knows%20that%20butter%20and%20sugar%20are%20cancelled%20out%20by%20applesauce.%20I%20have%20deemed%20it%20so.)%3C/p%3E%3Cp%3EEven%20with%20my%20changes,%20these%20cookies%20still%20feel%20a%20little%20more%20appropriate%20for%20fall%20than%20for%20spring,%20but%20it%E2%80%99s%20not%20like%20the%20weather%20outside%20feels%20all%20that%20appropriate%20for%20spring%20either.%20Seasonal,%20shmeasonal.%3C/p%3E%3Cp%3EApplesauce%20Cookies%20with%20Browned%20Butter%20Icing%3C/p%3E%3Cp%3ERecipe%20type:%20Dessert%3C/p%3E%3Cp%3EPrep%20time:%20%2020%20mins%3C/p%3E%3Cp%3ECook%20time:%20%2012%20mins%3C/p%3E%3Cp%3ETotal%20time:%20%2032%20mins%3C/p%3E%3Cp%3EServes:%2060%3C/p%3E%3Cp%3EThese%20sweet%20treats%20have%20a%20texture%20that%20falls%20somewhere%20between%20a%20soft%20cookie%20and%20a%20dense%20muffin%20%E2%80%93%20they%E2%80%99re%20quite%20good%20plain,%20but%20even%20better%20with%20a%20swirl%20of%20vanilla-scented%20browned%20butter%20icing.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400F.%20Line%20a%20cookie%20sheet%20with%20parchment%20paper.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20cream%20together%20the%20butter%20and%20brown%20sugar.%20Add%20the%20eggs,%20one%20at%20a%20time,%20stirring%20well%20after%20each%20addition,%20then%20add%20the%20applesauce%20and%20stir%20until%20smooth.%20Add%20the%20flour,%20raisins,%20salt%20and%20spices,%20and%20mix%20just%20until%20combined.%3C/p%3E%3Cp%3EDrop%20the%20dough%20by%20the%20tablespoonful%20onto%20the%20prepared%20cookie%20sheets,%20spacing%20the%20cookies%20about%202%E2%80%B3%20apart.%3C/p%3E%3Cp%3EBake%20in%20preheated%20oven%20until%20set%20and%20lightly%20browned%20on%20the%20edges,%20about%209-12%20minutes.%3C/p%3E%3Cp%3ELet%20the%20cookies%20cool%20on%20baking%20sheets%20for%2010%20minutes,%20then%20transfer%20to%20a%20wire%20rack%20to%20cool%20off%20completely.%3C/p%3E%3Cp%3EMake%20the%20Icing:%3C/p%3E%3Cp%3EWhile%20the%20cookies%20are%20cooling,%20prepare%20the%20icing.%3C/p%3E%3Cp%3EIn%20a%20small%20saucepan%20set%20over%20medium-low%20heat,%20melt%20the%20butter.%20Continue%20cooking%20the%20butter%20until%20it%E2%80%99s%20light%20brown%20and%20nutty-smelling.%20Immediately%20remove%20from%20the%20heat,%20and%20stir%20in%20the%20cream%20and%20vanilla%20extract.%3C/p%3E%3Cp%3EWhisk%20in%20the%20icing%20sugar,%20%C2%BC%20cup%20at%20a%20time,%20until%20the%20icing%20is%20thick%20but%20still%20spreadable.%20Spread%20onto%20the%20cooled%20cookies,%20and%20let%20set%20completely%20before%20serving.%20Store%20any%20leftovers%20in%20an%20airtight%20container%20in%20the%20refrigerator.%3C/p%3E%3Cp%3E3.2.1275%3C/p%3E%3Cp%3EAbout%20the%20author%3C/p%3E%3Cp%3EIsabelle%20Boucher%3C/p%3E%3Cp%3EI'm%20a%203
