Roasted Veggies and Sausage Recipe
Ingredients
- 1 large onion, cut into chunks
- 3-4 cloves garlic, chopped
- 3-4 large carrots, sliced
- 4-5 medium red potatoes, diced
- Coarsely sliced cabbage (I did not measure)
- 3-4 T olive oil
- Salt and pepper to taste (I used 1 tsp. salt and freshly ground pepper)
- 1 12-16 ounce package smoke sausage or kielbasa, sliced into 1-inch pieces
