Ingredients

  • 1 1/2 c. sugar
  • 3 c. water
  • 8 med pears - (to 10, about 3 lbs before preparing)
  • 1 1/2 c. sugar
  • 1 x lemon thinly sliced,
  •     if you like

Directions

  1. Combine 1 1/2 c. sugar and water; cook rapidly 2 min. Add in diced pears and boil slowly for 15 min. Add in remaining sugar and lemon. Stir till sugar dissolves. Cook rapidly till fruit is clear, about 25 min. Cover and let stand for 12 to 24 hrs in a cold place.
  2. Pack fruit into warm jars, leaving 1/4 inch headspace. Adjust caps. Process in boiling water for 5 min. Remove jars; cold and store.
  3. This recipe yields 5 half-pints.
  4. Yield: 5 half-pints
