,%20I%20am%20sticking%20to%20my%20original%20pasta%20plan.%3C/p%3E%3Cp%3EPerhaps%20through%20sheer%20force%20of%20will%E2%80%93%20and%20a%20suspension%20of%20squash-eating%E2%80%93%20we%20can%20lure%20spring%20into%20being%20a%20little%20early%20this%20year.%3C/p%3E%3Cp%3EThis%20might%20be%20the%20perfect%20pasta%20dish%20for%20the%20borderline%20of%20winter%20giving%20way%20to%20spring.%20It%E2%80%99s%20green%20and%20fresh%20tasting%E2%80%93%20especially%20if%20you%20juice%20up%20your%20basil%20pesto%20with%20fresh%20lemon%20the%20way%20I%20do%E2%80%93%20but%20it%E2%80%99s%20also%20hearty%20and%20filling.%20I%20mean,%20pasta%20with%20potatoes?%20Talk%20about%20redundant.%20On%20the%20other%20hand,%20winter%E2%80%99s%20dwindling%20days%20might%20be%20the%20perfect%20time%20to%20tuck%20into%20one%20last%20big%20bowl%20of%20hearty%20pasta%20before%20salad%20season%20really%20arrives.%3C/p%3E%3Cp%3EI%20adapted%20this%20recipe%20from%20Linda%20McCartney%E2%80%99s%20World%20of%20Vegetarian%20Cooking.%20The%20dish%20takes%20its%20name%20from%20pesto%20alla%20genovese,%20i.e.,%20pesto%20made%20with%20basil%20(because%20there%20are%20many%20other%20kinds!).%3C/p%3E%3Cp%3ECuriously,%20it%20seems%20that%20many%20English-speaking%20food%20bloggers%20have%20posted%20similar%20recipes%20under%20the%20title%20%E2%80%9CPasta%20alla%20Genovese%E2%80%9D%20(I%20suppose%20in%20some%20sort%20of%20logical%20amalgam%20of%20pasta%20+%20pesto%20alla%20genovese),%20whereas%20nearly%20every%20Italian%20language%20post%20with%20that%20same%20title%20features%20a%20different%20recipe%20entirely:%20one%20for%20pasta%20with%20a%20tomato-y%20meat%20sauce!%3C/p%3E%3Cp%3EBut%20back%20to%20the%20recipe%20at%20hand:%20the%20traditional%20way%20of%20serving%20pesto%20alla%20genovese%20is%20over%20pasta,%20tossed%20with%20lightly%20boiled%20green%20beans%20and%20potatoes.%20The%20bright%20crunch%20of%20the%20al%20dente%20green%20beans%20(along%20with%20a%20smattering%20of%20pine%20nuts)%20complements%20the%20other%20textures,%20though%20any%20other%20seasonal%20green%20would%20work%20nicely%20here%20as%20well.%3C/p%3E%3Cp%3EYou%20might%20not%20be%20able%20to%20sense%20the%20approach%20of%20spring%20just%20yet,%20especially%20if%20you%E2%80%99ve%20been,%20say,%20buried%20by%20a%20blizzard%20in%20the%20past%20week%20or%20two%E2%80%A6%20but%20at%20least%20you%20can%20make%20yourself%20some%20pasta%20genovese%20to%20remind%20you%20that%20before%20long%20the%20shift%20of%20the%20seasons%20will%20bring%20warmer%20weather,%20late%20evening%20sunlight,%20and%20a%20bounty%20of%20farmer%E2%80%99s%20market%20basil.%3C/p%3E%3Cp%3ERECIPE:%3C/p%3E%3Cp%3EPasta%20Genovese%3C/p%3E%3Cp%3E(with%20Pesto,%20Potatoes,%20and%20Green%20Beans)%3C/p%3E%3Cp%3E(Roughly%20adapted%20from%20Linda%20McCartney%E2%80%99s%20World%20of%20Vegetarian%20Cooking.)%3C/p%3E%3Cp%3E(Serves%206-8)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EHow%20to%20make%20it:%3C/p%3E%3Cp%3E1.%20Bring%20a%20large%20pot%20of%20water%20to%20a%20boil,%20optionally%20with%20a%20pinch%20of%20salt.%20Boil%20the%20chopped%20potatoes%20for%2010-12%20minutes%20or%20until%20easily%20pierced%20with%20a%20fork.%20Scoop%20the%20cooked%20potatoes%20out%20with%20a%20strainer%20in%20order%20to%20use%20the%20same%20boiling%20water%20to%20cook%20the%20green%20beans;%20strain%20the%20potatoes%20and%20set%20aside.%20In%20the%20same%20pot%20of%20boiling%20water,%20blanch%20the%20chopped%20green%20beans%20for%203-4%20minutes%20before%20draining%20them.%20Run%20some%20cold%20water%20over%20the%20cooked%20green%20beans%20to%20stop%20them%20from%20cooking%20and%20to%20keep%20their%20al%20dente%20crunch.%3C/p%3E%3Cp%3E2.%20While%20the%20potatoes%20and%20green%20beans%20are%20boiling,%20make%20the%20pesto.%20(Use%20a%20food%20processor%20to%20blend%201-2%20cloves%20garlic,%203%20Tbsp.%20pine%20nuts,%20and%20a%20pinch%20of%20salt%20until%20finely%20chopped.%20Add%203%20cups%20basil%E2%80%93%20loosely%20packed%20with%20stems%20removed%E2%80%93%20and%20several%20Tbsp.%20fresh%20lemon%20juice,%20and%20blend.%20Then%20gradually%20blend%20in%20%E2%85%93%20cup%20olive%20oil,%20and%20finally%20%C2%BC%20cup%20grated%20Parmesan.)%20Set%20aside.%3C/p%3E%3Cp%3E3.%20Bring%20a%20new%20large%20pot%20of%20lightly%20salted%20water%20to%20a%20boil%20(or%20use%20the%20same%20water%20from%20step%20%231,%20but%20I%20like%20to%20start%20fresh%20for%20this%20step).%20Boil%20the%20pasta,%20according%20to%20package%20instructions,%20until%20just%20al%20dente.%20Strain,%20reserving%20up%20to%20%E2%85%93%20cup%20of%20the%20pasta%20cooking%20water%20(simply%20place%20a%20heat-proof%20glass%20measuring%20cup%20or%20similar%20container%20in%20the%20sink%20below/beside%20the%20colander%20you%20use%20to%20strain%20your%20pasta).%3C/p%3E%3Cp%3E4.%20Transfer%20the%20pasta%20to%20a%20large%20bowl%20or%20serving%20dish.%20Add%20half%20the%20pesto%20and%20up%20to%20%E2%85%93%20cup%20of%20the%20reserved%20pasta%20cooking%20water.%20This%20liquid%20will%20help%20the%20p
