  •     Warm, boiled and skinned, potatoes
  • 1 bn Cilantro, stems included
  • 6 sm Yellow chiles seeded
  • 1 lrg Pale green (Hungarian) chile seeded
  • 1 bn Green onions, white and green parts
  • 1 c. Mexican Crema see * Note
  • 1/2 c. Extra virgin olive oil
  •     Juice of 1 lime

Directions

  1. Place all of the above ingredients, except potatoes, in a blender. Blend till very smooth.
  2. Use as a sauce over the very warm, boiled, and skinned potatoes.
  3. This recipe yields about 2 1/2 c. of sauce for side dish servings.
