Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 sticks (16 tablespoons) cold unsalted butter, cut into small cubes
  • ½ cup plus 2 tablespoons ice water
  • For the Filling:
  • 3 large eggs, lightly beaten
  • 1 cup granulated sugar
  • ½ cup dark corn syrup
  • ½ teaspoon vanilla extract
  • 3 tablespoons melted butter
  • 2 tablespoons bourbon
  • pinch of salt
  • 2 cups (about 8 ounces) chopped pecans
  • Special equipment: rolling pin, 2 1/2-inch round cookie cutter, pastry brush, 2 mini-muffin tins
