.%20Lee?%20Dee?%20Close%20enough%20for%20me!%3C/p%3E%3Cp%3EMy%20pal%20Karen%20called%20me%20recently%20and%20wondered%20if%20I%20was%20interested%20in%20the%20ice%20cream%20that%20had%20been%20offered%20to%20both%20of%20us%20by%20the%20folks%20at%20Blue%20Bell%20Creameries.%20Karen%20hails%20from%20Texas%20where%20Blue%20Bell%20is%20an%20institution%20and%20she%20has%20brought%20me%20into%20the%20fold.%20We%20visited%20their%20local%20facility%20a%20couple%20of%20months%20ago%E2%80%A6if%20you%20recall%20it%20was%20107%20in%20the%20shade%20in%20Denver%20and%20I%20wanted%20to%20move%20into%20their%20freezer%20it%20felt%20SO%20good.%20That%20was%20discouraged%20by%20management%20though%20so%20instead%20I%20made%20an%20ice%20cream%20dessert%20and%20I%E2%80%99ve%20survived%20to%20have%20another%20opportunity%20to%20sample%20some%20of%20their%20wonderful%20ice%20cream.%3C/p%3E%3Cp%3EWhen%20Karen%20also%20offered%20to%20run%20by%20and%20pick%20up%20both%20of%20ours%20and%20bring%20by%20what%20we%20knew%20would%20be%20a%20seasonal%20flavor%20I%20was%20most%20grateful;%20my%20overbooked%20schedule%20is%20totally%20out%20of%20control%20and%20I%E2%80%99m%20not%20sure%20a%20half%20gallon%20of%20ice%20cream%20was%20going%20to%20be%20able%20to%20pull%20me%20away.%3C/p%3E%3Cp%3EKaren%20arrived%20a%20bit%20later%20and%20I%E2%80%99m%20sorry%20all%20of%20%20you%20weren%E2%80%99t%20here.%20I%E2%80%99m%20sure%20between%20us%20we%20could%20have%20served%20ice%20cream%20to%20every%20one%20of%20our%20readers%E2%80%A6OK,%20maybe%20an%20exaggeration%20but%20still,%20four%20half%20gallons%20for%20each%20of%20us.%20What%20was%20a%20girl%20to%20do?!!%3C/p%3E%3Cp%3EMy%20first%20order%20of%20business%20was%20to%20give%20the%20Christmas%20Cookies%20half%20gallon%20to%20my%20neighbor%20with%20a%203%20yr%20old%20girl;%20it%20just%20seemed%20so%20fitting.%20When%20a%20friend%20arrived%20a%20couple%20of%20days%20later%20with%20his%20two%20boys%E2%80%A6I%20sent%20them%20home%20with%20the%20half%20gallon%20of%20Gingerbread;%20I%20mean%20how%20better%20to%20share%20the%20goodness%20of%20Blue%20Bell%20than%20to%20share%20the%20goods,%20right?%3C/p%3E%3Cp%3EThat%20left%20two%20for%20me%20and%20I%20knew%20I%20wanted%20to%20make%20something%20with%20one%20of%20them%20and%20I%20was%20leaning%20towards%20the%20Peppermint;%20it%E2%80%99s%20always%20been%20a%20favorite.%20So,%20I%20decided%20to%20open%20the%20half%20gallon%20of%20Spiced%20Pumpkin%20Pecan%20ice%20cream%20and%20just%20taste%20it.%20To%20be%20honest%E2%80%A6I%E2%80%99m%20not%20a%20pumpkin%20crazy%20person%E2%80%A6but%20I%20LOVED%20that%20ice%20cream.%20Pumpkin%20ice%20cream%20is%20combined%20with%20crunchy%20sugar-coated%20pecans%20and%20a%20rich%20cinnamon-honey-praline%20sauce;%20I%20had%20no%20problem%20at%20all%20eating%20a%20bowl%20of%20it%20every%20night%20until%20it%20was%20all%20gone.%20Sob.%3C/p%3E%3Cp%3EThat%20left%20me%20and%20Peppermint,%20a%20cool,%20refreshing%20peppermint%20flavored%20ice%20cream%20sprinkled%20with%20peppermint%20candy%20pieces.%20While%20my%20first%20inclination%20was%20to%20create%20a%20cocktail,%20Karen%20had%20the%20same%20thing%20in%20mind%20so%20while%20she%20went%20cocktail%20crazy%20I%20decided%20to%20go%20in%20another%20direction.%20The%20Sandy%20direction.%20I%20decided%20to%20try%20making%20some%20mini%20ice%20cream%20sandwiches%20and%20using%20those%20thin%20chocolate%20wafer%20cookies%20available%20at%20the%20grocery%20store%20seemed%20the%20perfect%20choice.%20These%20were%20really%20too%20easy.%20Ice%20cream%20spooned%20and%20pressed%20between%20two%20cookies,%20drizzled%20with%20some%20white%20chocolate%20and%20sprinkled%20with%20some%20crushed%20candy%20cane%20pieces.%20Can%20I%20just%20tell%20you%20that%20I%20was%20unprepared%20for%20how%20totally%20fabulous%20they%20are?%20Those%20chocolate%20wafer%20cookies?%20They%20taste%20JUST%20like%20the%20cookie%20part%20of%20ice%20cream%20sandwiches%E2%80%A6I%E2%80%99m%20not%20sure%20anything%20I%20made%20would%20have%20re-created%20that%20flavor%20so%20this%20%E2%80%98Sandy%E2%80%99%20moment%20was%20truly%20meant%20to%20be.%20:)%3C/p%3E%3Cp%3EThe%20perfect%20party%20treat%20for%20adults%20or%20kids..we%20seriously%20LOVED%20these%E2%80%A6you%20will%20too!%3C/p%3E%3Cp%3EMini%20Peppermint%20Ice%20Cream%20Sandwiches%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E1/2%20package%20candy%20canes,%20crushed%20(I%20found%20candy%20canes%20with%20streaks%20of%20chocolate%20and%20they%20were%20perfect%20but%20regular%20candy%20canes%20would%20be%20fine%20too).%3C/p%3E%3Cp%3EPreparation%3C/p%3E%3Cp%3EPut%20a%20piece%20of%20parchment%20paper%20on%20a%20cookie%20sheet%20and%20place%20in%20freezer%20at%20least%2010%20minutes%20prior%20to%20making%20the%20sandwiches.%3C/p%3E%3Cp%3EPress%20a%20large%20tablespoon%20of%20ice%20cream%20between%20two%20of%20the%20wafers%20cookies%20and%20put%20on%20chilled%20cookie%20sheet;%20continue%20until%20you%20have%20used%20all%20of%20the%20wafers.%20Put%20cookies%20in%20the%20freeze
