- 1¾ cups all-purpose flour

- Zest of one lemon
- 8 Tbsp (1 stick) unsalted butter, room temperature
- ¾ cups granulated sugar
- 2 large eggs, room temperature
- ½ teaspoon vanilla bean paste
- ½ teaspoon lemon emulsion
- ½ cup powdered sugar (for rolling)*
