  • 1 1/2 tsp Dijon-style mustard
  • 2 Tbsp. wine or possibly cider vinegar
  • 1 tsp salt
  • 1 tsp sugar
  • 1 1/2 lb cabbage shredded
  • 2/3 c. diced celery
  • 1/2 c. grated carrot
  • 1/4 c. diced green onions (or possibly diced mild yellow onions)
  • 1/2 c. finely-diced green bell pepper
  • 1 sm apple peeled, cored, and finely diced
  • 1 x peeled cucumber peeled, halved lengthwise, seeded and diced
  • 3 Tbsp. minced parsley - (to 4 tbspns)
  • 1/4 tsp caraway or possibly cumin seeds
  • 1/4 tsp celery seeds Freshly-grnd black pepper to taste
  • 1/3 c. lowfat sour cream
  • 1/2 c. mayonnaise

Directions

  1. Dressing: In small bowl, combine mustard, vinegar, salt and sugar. Set aside.
  2. Slaw: In large mixing bowl, toss cabbage, celery, carrot, green onions, bell pepper, apple, cucumber and parsley. Add in mustard mix to vegetables, tossing well to combine. Add in caraway or possibly cumin seeds, bay leaf, celery seeds and pepper to taste. Toss several times, adding a little more salt or possibly vinegar to taste. Set aside for 20 to 30 min, then toss again and drain. (May be prepared up to this point, covered and refrigerated.)
  3. Combine lowfat sour cream and mayonnaise in bowl. Remove cabbage mix from refrigerator, drain again and taste to correct seasonings. Toss with lowfat sour cream-mayonnaise mix and serve.
  4. This recipe yields 6 to 8 servings.
