Homemade Biscoff Cookies with Biscoff Cream Cheese Frosting Recipe
Ingredients
- 2 cups all purpose flour
- 1 Tbsp cinnamon
- 1/4 tsp freshly ground nutmeg
- 1/4 tsp ground ginger
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup sugar
- 1/4 cup firmly packed dark brown sugar
- 1 tsp pure vanilla extract
- For the Frosting:
- 10 ounces cream cheese, at room temperature
- 1 stick (4 ounces) unsalted butter, at room temperature
- 5 cups confectionersâ sugar, whisked to lighten

%20were%20first%20discovered%20available%20on%20store%20shelves.%20No%20longer%20relegated%20simply%20to%20passengers%20flying%20Delta%20Airlines;%20Biscoff%20cookies%20were%20now%20in%20STORES.%20Not%20many%20as%20it%20turns%20out%20but%20still,%20with%20some%20effort%20and%20a%20bit%20of%20searching,%20they%20started%20showing%20up%20across%20our%20land.%20Cost%20Plus%20World%20Market%20for%20me;%20a%20small%20grocer%20in%20upstate%20New%20York%20for%20another%20and%20then,%20if%20all%20else%20fails?%20Online%20of%20course!%3C/p%3E%3Cp%3EI%20found%20both%20the%20cookies%20and%20the%20spread%20at%20Cost%20Plus%20and%20though%20the%20cookies%20are%20wonderful;%20crisp%20and%20slightly%20spicy%20with%20cinnamon%20and%20other%20spices,%20the%20spread%20is%20both%20my%20nirvana%20and%20my%20Achilles%20heel.%20I%20read%20on%20the%20Chicagoist%20website,%20%E2%80%98Imagine%20that%20peanut%20butter%20and%20Biscoff%20cookies%20had%20a%20baby.%E2%80%99%20That%E2%80%99s%20pretty%20close%20to%20describing%20it.%20Love%20Nutella?%20Be%20forewarned;%20this%20is%20even%20better!%20(In%20full%20disclosure%20I%20might%20be%20the%20only%20person%20on%20the%20planet%20but%20I%20can%20not%20stand%20Nutella).%3C/p%3E%3Cp%3EThe%20cookie%20spread%20was%20invented%20in%202007%20when%20the%20winner%20of%20a%20Belgian%20prime%20time%20TV%20show%20%E2%80%9CDe%20Bedenkers%E2%80%9D%20concocted%20it,%20according%20to%20the%20Lotus%20Bakeries%20web%20site.%20Made%20with%2057%25%20percent%20Biscoff%20cookies%20that%20are%20ground%20and%20then%20added%20to%20other%20ingredients;%20it%20forms%20a%20smooth%20spread%20that%20I%20think%20it%20is%20pure%20heaven.%20The%20lower%20sugar%20content%20allows%20you%20to%20down%20spoonful%20after%20spoonful%20without%20wanting%20to%20die.%20I%20wish%20I%20were%20kidding%20but%20that%20first%20jar?%20It%20sat%20on%20my%20desk%20for%20at%20most%20two%20days%20with%20a%20spoon%20it%20in.%20I%20must%20have%20said%20a%20hundred%20times,%20%E2%80%98This%20is%20my%20LAST%20bite.%E2%80%99%20Until%20it%20was%20the%20last%20bite.%20In%20the%20jar.%20All%20gone.%20I%20can%E2%80%99t%20believe%20I%20ate%20the%20whole%20thing!%3C/p%3E%3Cp%3EI%E2%80%99ve%20discovered%20after%20finally%20getting%20my%20hands%20on%20these%20gems%20that%20they%20are%20very%20similar%20to%20an%20old%20fashioned%20cookie%20called%20speculoos.%20%20Dorie%20Greenspan%20%20has%20a%20recipe%20in%20her%20book%20Around%20My%20French%20Table%20that%20many%20have%20made%20with%20a%20lot%20of%20success.%20I%20thought%20they%20seemed%20a%20bit%20spicier%20than%20the%20Lotus%20brand%20of%20cookies%20I%20tried%20so%20I%20used%20this%20recipe%20instead%20with%20a%20slight%20revision.%20I%20like%20the%20bit%20lighter%20hand%20with%20the%20spices%20and%20the%20richer%20flavor%20from%20the%20dark%20brown%20sugar%20and%20I%20thought%20they%20were%20a%20very%20close%20fit.%3C/p%3E%3Cp%3EI%20wanted%20very%20much%20to%20use%20the%20spread%20though%20so%20I%E2%80%99ve%20revised%20a%20very%20old%20recipe%20I%E2%80%99ve%20used%20for%20years%20that%20combines%20peanut%20butter%20and%20cream%20cheese%20in%20a%20frosting%20and%20substituted%20the%20Biscoff.%20It%20was%20a%20great%20marriage,%20the%20cream%20cheese%20adds%20just%20enough%20tang%20to%20the%20mixture%20that%20it%E2%80%99s%20not%20overly%20sweet%20but%20it%20creates%20a%20luscious%20bond%20between%20two%20of%20these%20cookies.%20%20I%20made%20them%20to%20take%20to%20a%20gathering%20a%20couple%20of%20weeks%20ago%20and%20they%20disappeared.%20I%E2%80%99m%20certain%20Cost%20Plus%20wondered%20about%20the%20interest%20in%20this%20one%20item%20that%20following%20week;%20everyone%20who%20tried%20them%20said%20they%20would%20be%20off%20to%20buy%20a%20jar%20for%20themselves,%20stat!%3C/p%3E%3Cp%3EHomemade%20Biscoff%20Cookies%20with%20Biscoff%20Cream%20Cheese%20Frosting%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EFor%20the%20Cookies:%3C/p%3E%3Cp%3EPreparation%3C/p%3E%3Cp%3ETo%20Make%20the%20Cookies:%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl%20add%20the%20flour,%20cinnamon,%20nutmeg,%20ginger,%20salt,%20and%20baking%20soda%20together.%20Whisk%20together%20thoroughly%20to%20combine%20and%20aerate.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20or%20the%20bowl%20of%20a%20stand%20mixer,%20cream%20the%20butter%20together%20with%20the%20sugar%20and%20brown%20sugar%20until%20light%20and%20fluffy.%20Add%20the%20vanilla%20extract%20and%20mix%20again.%3C/p%3E%3Cp%3EWith%20the%20mixer%20on%20slow,%20add%20the%20flour%20mixture%20a%20little%20bit%20at%20a%20time%20until%20the%20dough%20is%20fully%20combined.%20Make%20sure%20to%20scrape%20the%20sides%20of%20the%20bowl%20often.%3C/p%3E%3Cp%3ERefrigerate%20the%20dough%20for%20at%20least%20half%20an%20hour.%3C/p%3E%3Cp%3EWhen%20the%20dough%20is%20thoroughly%20chilled,%20preheat%20the%20oven%20to%20350F.%3C/p%3E%3Cp%3ELightly%20flour%20a%20large%20surface%20and%20roll%20out%20the%20dough%20to%201/4?%20thick%20as%20best%20you%20can.%20Using%20a%20small%20biscuit%20or%20cookie%20
