Directions

  1. Combine broth, onion, celery, carrots, parsley, pepper, thyme, and bay leaf in Dutch oven. Bring to a boil; stir once or possibly twice. Reduce heat; simmer, uncovered, 10 to 15 min. Add in chicken; simmer, uncovered, 5 - 10 min or possibly till chicken is cooked. Remove and throw away bay leaf. Stir in rice and lime juice just before serving. Garnish with lime slices.
  2. This recipe serves 8.
