Ingredients

  • Soft corn tortillas
  • 1 cup of shredded cheddar cheese (I used about 2-3 Tbsp per taco)
  • 1 15oz can black beans, rinsed and drained
  • 1 15oz can of diced & fire roasted tomatoes
  • 3-4 cloves garlic
  • 1/2-3/4 cup frozen corn
  • 1 avocado mashed with some lime juice (basically guacamole)
  • 1 red onion diced
  • chopped cilantro (to taste)
  • The Directions
  • Step 1: Warm corn tortillas in the oven or microwave and chop all your veggies/toppings
