Directions

  1. Cut Garlic head in half and sprinkle with extra virgin olive oil. Bake on foil for 45 min at 400 . Squeeze out cloves and mash.
  2. Salt steak and sprinkle with pepper. Pre-heat a large heavy frying pan to medium high. Don't add in butter. Sear seasoned steak on both sides till well browned. About one minute per side. Reduce heat to medium and add in 2 Tbsp. of butter. continue to cook for 3 to 5 min on each side. Remove meat and keep hot.
  3. Pour off butter from the skillet and add in the scallions and red wine. Bring to a boil, then wisk in the garlic puree. Boil till the liquid becomes thick and syrupy. Scrape the meat residue from the pan as it boils with a wooden spoon. Stir in the meat juice which has formed under the steak. Bring back to a boil and remove from heat. Add in the remaining butter and stir till blended.
  4. Slice the meat in thin strips across the grain and arrange on a hot platter. Pour the wine sauce in a strip down the center of the meat and serve.
