Easy Chicken Pot Pie; life IS like a box of chocolates Recipe

Ingredients

• Chicken Pot Pie
• 2 chicken breasts, boneless, skinless, cut into 1" (2.5cm) pieces
• 2 medium carrots, peeled and sliced into thin half circles
• 2 small leeks, cleaned and thinly sliced
• 2 ribs celery, thinly sliced
• 1 clove garlic, minced
• 3/4 cup peas
• 2 tsp olive oil
• 1/2 tsp paprika
• 1 tsp thyme
• 1 tbs parsley
• 1 cup chicken broth
• 1/2 cup white wine
• 1 tbs cornstarch (maizena) dissolved in 2 tbs chicken stock (if needed)
