.%3C/p%3E%3Cp%3EHowever,%20I%20have%20been%20committed%20to%20make%20more%20things%20from%20scratch%20whether%20or%20not%20a%20mix%20is%20available%20-%20especially%20things%20that%20have%20such%20a%20short%20list%20of%20ingredients%20that%20are%20all%20part%20of%20my%20regular%20pantry.%20A%20little%20while%20back%20I%20visited%20the%20Lindt%20Chocolate%20museum,%20followed%20by%20a%20(very%20long)%20visit%20to%20the%20museum%20gift%20shop.%20It%20was%20full%20of%20every%20kind%20of%20amazing%20chocolate%20product%20you%20can%20think%20of%20and%20the%20largest%20selection%20of%20high-cacao-percentage%20bars%20and%20powders%20I%20have%20ever%20seen.%20It%20was%20glorious.%20I%20picked%20up%20some%20amazing%20Cocoa%20made%20from%20fair-trade%20South%20American%20beans%20and%20I%20knew%20right%20then%20and%20there%20the%20first%20thing%20I%20made%20with%20it%20would%20be%20brownies.%3C/p%3E%3Cp%3EI%20really%20did%20my%20research.%20I%20must%20have%20read%20every%20brownie%20recipe%20known%20to%20woman,%20and%20when%20it%20came%20time%20to%20make%20them%20my%20chocolate-loving%20instincts%20really%20kicked%20in.%20I%20knew%20I%20wanted%20moist%20fudge%20like%20brownies%20that%20were%20so%20chocolaty%20only%20a%20true%20chocoholic%20would%20appreciate%20them.%20Be%20warned%20-%20I%20really%20think%20I%20succeeded.%3C/p%3E%3Cp%3EThese%20Brownies%20have%20a%20perfect%20flaky%20top%20crust,%20get%20the%20perfect%20amount%20of%20crunchy%20on%20the%20edges,%20and%20have%20a%20deep,%20dark,%20and%20rich%20chocolate%20flavor%20(enhanced%20by%20a%20shot%20of%20espresso).%20Little%20bursts%20of%20milk%20chocolate%20from%20the%20chips%20are%20just%20the%20bonus%20that%20will%20put%20you%20over%20the%20edge%20into%20chocolate%20bliss.%20Serve%20with%20a%20scoop%20of%20vanilla%20ice%20cream%20and%20any%20guests%20might%20never%20leave.%3C/p%3E%3Cp%3EDouble%20Chocolate%20Espresso%20Brownies%3C/p%3E%3Cp%3E1%20shot%20of%20espresso*%3C/p%3E%3Cp%3EIn%20a%20double%20boiler%20(you%20can%20just%20use%20a%20pyrex%20bowl%20over%20a%20small%20sauce%20pan)%20over%20medium-low%20heat,%20melt%20the%20butter.%20Add%20the%20cocoa%20powder%20and%20semi-sweet%20chocolate%20and%20espresso%20and%20stir%20until%20well%20combined.%20Remove%20from%20heat.%3C/p%3E%3Cp%3EPlace%20chocolate%20in%20a%20mixing%20bowl%20(can%20use%20same%20bowl%20as%20you%20used%20to%20melt%20it%20in%20-%20just%20let%20it%20cool%20down%20a%20bit)%20and%20stir%20in%20sugar%20until%20well%20combined%20and%20dissolved.%20Add%20vanilla%20and%20eggs%20and%20quickly%20whisk%20until%20all%20well%20combined.%20Fold%20in%20flour%20and%20salt.%3C/p%3E%3Cp%3EPour%20into%20a%20buttered/floured%208%20in%20square%20pan%20(or%20round).%20Sprinkle%20milk%20chocolate%20chips%20over%20the%20batter%20so%20they%20kind%20of%20float%20on%20top.%20Bake%20at%20325%20F%20/%20163%20C%20in%20a%20Convection%20oven%20for%20about%2020%20minutes%20or%20until%20a%20toothpick%20inserted%20in%20the%20center%20comes%20out%20clean%20(if%20using%20a%20convention%20oven%20you%20will%20probably%20need%20to%20cook%20for%20around%2020%20percent%20longer).%3C/p%3E%3Cp%3ELet%20cool%20in%20pan%20on%20a%20wire%20rack%20(so%20the%20bottom%20of%20the%20pan%20cools%20as%20well)%20for%20around%2020%20minutes%20or%20so%20before%20cutting.%20Enjoy%20sprinkled%20with%20powdered%20sugar%20or%20with%20a%20scoop%20of%20vanilla%20ice%20cream%20:)%3C/p%3E%3Cp%3E*%20If%20you%20don't%20have%20espresso%20easily%20available%20-%20use%20a%20dark%20brewed%20coffee%20(no%20need%20for%20fancy%20machines%20though%20-%20I%20make%20my%20espresso%20on%20the%20stove%20top%20in%20one%20of%20these).%20It%20doesn't%20add%20a%20strong%20espresso%20flavor%20-%20just%20a%20hint%20that%20enhances%20the%20darkness%20of%20the%20cocoa.%20But%20don't%20worry%20-%20you%20can%20still%20enjoy%20these%20brownies%20if%20you%20simply%20leave%20the%20espresso%20out.%3C/p%3E){kind=link}
