%20grown%20children%20were%20growing%20up,%20we%20spent%20every%20summer%20at%20our%20lake%20house%20on%20Lake%20Buchanan,%20in%20the%20Texas%20Hill%20Country.%20It%20had%20been%20in%20my%20hubby's%20family%20since%20the%20lake%20and%20Dam%20were%20first%20built%20back%20in%20the%201940's.%20The%20wonderful%20*Austin%20chalk*%20rambling%20ranch%20style%20house%20with%204%20bedrooms%20&%203%20baths%20was%20built%20by%20his%20maternal%20grandparents%20in%20one%20the%20first%20private%20gated%20communities%20ever.%20Our%20boat%20docks%20were%20within%20yards%20of%20the%20house%20&%20there%20was%20an%20outdoor%20sink%20area%20to%20clean%20fish%20and%20keep%20bait%20buckets%20full%20of%20minnows%20in%20the%20water.%20Summers%20there%20were%20always%20magical.%3C/p%3E%3Cp%3EEvery%20year%20the%20excitement%20about%20the%20lake%20started%20even%20before%20school%20was%20out,%20each%20of%20us%20planning%20what%20we'd%20be%20taking%20with%20us%20and%20by%20the%20time%20we%20did%20actually%20make%20our%20road%20trip%20to%20the%20lake,%20we%20very%20much%20resembled%20the%20Beverly%20Hillbillys.%20With%20hubby%20and%20I,%20there%20were%20also%20our%20two%20kids%20(usually%20each%20with%20a%20friend%20in%20tow),%20our%20Cairn%20Terrier%20Lulu,%20an%20unfortunate%20a%20fortunate%20teenager%20to%20be%20my%20*Mother's%20Helper*%20for%20the%20summer%20and%20our%20two%20cats,%20along%20with%20so%20much%20stuff%20%20that%20the%20Suburban%20was%20literally%20about%205%20inches%20off%20the%20ground.%20It%20rather%20resembled%20a%20circus%20to%20those%20who%20witnessed%20us%20en%20route,%20especially%20with%20the%20full%20luggage%20rack%20on%20top%20of%20the%20car%20and%20animals%20and%20kids%20hanging%20out%20the%20windows%20amidst%20the%20happy%20chaos.%3C/p%3E%3Cp%3EAnyway,%20I%20always%20had%20the%20worst%20time%20trying%20to%20remember%20what%20I%20already%20had%20in%20the%20pantry%20and%20freezers%20at%20the%20lake,%20as%20I%20was%20preparing%20to%20head%20there%20or%20whether%20we%20were%20going%20in%20the%20direction%20of%20home%20and%20I%20was%20trying%20to%20remember%20the%20same%20about%20home.%20Of%20course,%20this%20was%20in%20the%20days%20before%20cell%20phones%20and%20personal%20computers%20and%20iPods,%20so%20we%20actually%20had%20to%20rely%20on%20the%20hand%20written%20lists%20we%20made,%20then%20good%20luck%20finding%20that%20list%20when%20it%20was%20the%20next%20time%20to%20go%20to%20the%20lake.%20I%20could%20never%20find%20mine.%20So,%20I%20began%20stocking%20canned%20items%20that%20I%20could%20use%20to%20throw%20together%20a%20quick%20side%20dish%20or%20two,%20which%20saved%20me%20from%20having%20to%20make%20the%201%20hour%20round%20trip%20drive%20into%20town%20(Burnet,%20TX)%20the%20minute%20we%20arrived%20and%20got%20the%20car%20unloaded.%20You%20see,%20we%20always%20brought%20beef,%20chicken%20&%20pork%20from%20home,%20but%20knowing%20we'd%20get%20better%20veggies%20there,%20we%20seldom%20took%20them%20with%20us.%20Besides,%20we%20also%20had%20a%20veggie%20garden%20that%20our%20caretaker%20started%20for%20us%20every%20year.%3C/p%3E%3Cp%3EThe%20canned%20items%20I%20kept%20were%20mandarin%20oranges,%20pine%20nuts%20(in%20a%20jar),%20hearts%20of%20palm,%20artichoke%20hearts%20and%20some%20other%20less%20unusual%20items,%20which%20really%20made%20my%20life%20a%20bit%20easier,%20like%20tomato%20soup,%20crackers,%20broth,%20pasta%20&%20sauce,%20etc.%20Since%20we%20had%20butter%20lettuce%20and%20spring%20onions%20growing%20at%20the%20lake,%20we%20almost%20always%20had%20this%20salad%20with%20dinner%20upon%20every%20arrival.%20That%20way,%20I%20could%20get%20us%20all%20settled%20in,%20making%20a%20list%20as%20I%20went,%20then%20make%20the%20long%20trip%20into%20town%20and%20the%20store%20the%20next%20morning.%20This%20is%20why%20I%20called%20it%20the%20Divine%20Intervention%20Mandarin%20Salad.%3C/p%3E%3Cp%3EI%20don't%20believe%20I%20know%20anyone%20who%20hasn't%20adored%20this%20salad.%20The%20combination%20of%20all%20the%20ingredients,%20along%20with%20the%20dressing,%20never%20fails%20to%20leave%20a%20parade%20of%20flavors%20exploding%20in%20your%20mouth.%20So,%20let's%20get%20after%20it,%20shall%20we?%3C/p%3E%3Cp%3EDivine%20Intervention%20Mandarin%20Salad%20With%20Hearts%20of%20Palm%20&%20Toasted%20Pine%20Nuts:%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EAssemble%20ingredients%20and%20toss%20with%20Honey%20Mustard%20Vinaigrette.%20Recipe%20is%20below.%3C/p%3E%3Cp%3EHoney%20Mustard%20Vinaigrette:%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3ELarado's%20Sweet%20&%20Hot%20Oriental%20Fire%20&%20Lace%20Mustard%20~%20OR%20~%20your%20favorite%20honey%20mustard%3C/p%3E%3Cp%3Efresh%20extra%20virgin%20olive%20oil%3C/p%3E%3Cp%3Eyour%20favorite%20balsamic%20or%20red%20wine%20vinegar%3C/p%3E%3Cp%3Esalt%20and%20pepper%20to%20taste%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EI%20wish%20I%20could%20give%20you%20actual%20measurements,%20but%20that%20just%20isn't%20the%20way%20I%20roll%20when%20making%20homemade%2
