.%20The%20furthest%20thing%20from%20my%20mind%20should%20be%20Thai%20food%20and%20the%20unique%20coconut%20jasmine%20rice%20that%20is%20served%20alongside%20my%20favorite%20curries%20at%20our%20local%20Thai%20restaurant.%20I'm%20pretty%20sure%20that%20I'd%20have%20to%20drive%20a%20bit%20from%20my%20current%20location%20to%20even%20find%20Thai%20food.%20Yet,%20that's%20what%20I'm%20thinking%20about.%20Hey,%20my%20cravings%20know%20not%20a%20geographical%20restriction.%20So%20tonight,%20I%20bring%20you%20this%20delicious%20coconut%20rice%20that%20tastes%20just%20like%20the%20restaurant%20version.%20This%20recipe%20came%20to%20me%20in%20my%20Facebook%20inbox%20from%20my%20friend%20Amber,%20all%20the%20way%20in%20sunny%20California,%20and%20was%20simply%20titled,%20%22Yummy%20Rice%22.%20Thank%20you,%20Amber!%3C/p%3E%3Cp%3EHere's%20what%20you%20need:%20jasmine%20rice,%20chicken%20broth,%20coconut%20milk%20(I%20used%20light),%20lemongrass%20and%20ginger%20(from%20a%20tube),%20and%20cilantro%20(I%20used%20fresh,%20but%20you%20could%20also%20use%20the%20kind%20from%20a%20tube,%20found%20in%20the%20produce%20section%20of%20your%20grocery%20store%20and%20eliminate%20chopping%20all%20together!)%3C/p%3E%3Cp%3EIf%20you've%20got%20a%20rice%20cooker,%20throw%20it%20all%20in%20together,%20stir%20it%20well,%20and%20cook%20until%20done.%20If%20don't%20have%20a%20rice%20cooker,%20bring%20the%20broth,%20coconut%20milk,%20ginger,%20lemongrass,%20and%20cilantro%20to%20a%20boil.%20Then%20add%20the%20rice%20and%20cover%20and%20cook%20according%20to%20the%20directions%20on%20the%20rice%20package.%3C/p%3E%3Cp%3EI%20think%20that%20this%20cooked%20to%20perfection%20in%20about%2015%20minutes.%20For%20the%20record,%20the%20flavors%20in%20this%20rice%20were%20lost%20on%20my%20dear%20husband.%20He%20took%20a%20bite%20and%20asked,%20with%20a%20puzzled%20look,%20%22What%20is%20that,%20orange?%22%20You%20see,%20he's%20never%20been%20to%20my%20favorite%20Thai%20restaurant.%20He's%20never%20tasted%20the%20rice%20or%20the%20curry%20or%20the%20coconut%20soup.%20Remember%20when%20I%20wrote%20about%20how%20he%20orders%20Buffalo%20Chicken%20Pizza%20when%20I'm%20out%20of%20town?%20Well,%20I%20get%20Thai%20takeout%20when%20he's%20away.%20I%20guess%20our%20guilty%20take%20out%20pleasures%20soften%20the%20disadvantages%20of%20being%20apart.%20Absence%20makes%20the%20stomach%20grow%20rounder?%20Hmmm.%20My%20kids%20and%20I%20loved%20the%20rice.%20Probably%20because%20they've%20developed%20a%20taste%20for%20it.%20All%20of%20those%20take%20out%20dinners%20when%20daddy%20is%20away...%3C/p%3E%3Cp%3EPlace%20all%20ingredients%20in%20a%20rice%20cooker%20and%20stir%20before%20cooking%20OR%20bring%20everything%20except%20for%20rice%20to%20a%20boil,%20then%20add%20rice.%20Cover%20and%20cook%20according%20to%20package%20directions.%3C/p%3E%3Cp%3EOh,%20you%20know%20what%20I%20just%20realized?!%20The%20Basil%20Chicken%20in%20Coconut-Curry%20Sauce%20that%20I%20made%20all%20the%20way%20back%20in%20February%20would%20be%20excellent%20over%20this%20rice.%20Give%20it%20a%20try%20and%20let%20me%20know%20what%20you%20think.%20:%20)%3C/p%3E){kind=link}
