%20Put%20aside.%3C/p%3E%3Cp%3ERinse%20the%20chicken%20under%20running%20water%20and%20pat%20dry%20with%20paper%20towels%20inside%20and%20out.%20Spathcock%20or%20butterfly%20the%20chicken%20by%20removing%20the%20backbone%20completely%20with%20a%20sharp%20butcher%20knife%20or%20chicken%20shears.%20Some%20folks%20remove%20the%20breast%20plate%20but%20I%20just%20lay%20it%20down,%20skin%20side%20up%20and%20press%20to%20break%20the%20wishbone%20and%20breast%20area%20so%20that%20the%20chicken%20lays%20completely%20flat.%20Separate%20the%20skin%20from%20the%20chicken%20on%20the%20breasts%20and%20thigh%20areas%20by%20running%20your%20fingers%20underneath%20the%20skin.%20Place%20in%20a%20large%20sealable%20bag%20or%20glass%20dish.%20Put%20aside%20while%20you%20make%20the%20marinade.%3C/p%3E%3Cp%3EIn%20a%20small%20saucepan,%20heat%20the%20marinade%20ingredients%20over%20low%20just%20until%20the%20salt%20is%20dissolved.%20Remove%20from%20heat.%20Add%20the%20ice%20water,%20ice%20and%20stir%20until%20ice%20melts.%20Add%20marinade%20to%20the%20chicken.%20Refrigerate%202%20to%204%20hours%20turning%20the%20chicken%20over%20every%20hour.%20Discard%20the%20marinade%20and%20let%20chicken%20rest%20for%2030%20minutes.%20Pat%20chicken%20completely%20dry%20with%20paper%20towels%20before%20applying%20the%20chili%20paste.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20degrees%20F.%3C/p%3E%3Cp%3EPlace%20onion%20slices%20on%20bottom%20of%20a%20roasting%20pan.%20Place%20chicken%20on%20top%20of%20onions%20skin%20side%20up.%20Be%20sure%20to%20use%20a%20brush%20being%20careful%20not%20to%20stain%20your%20clothes%20while%20applying%20the%20paste.%20Spoon%20a%20little%20of%20the%20rub%20mixture%20under%20the%20lifted%20skin%20areas%20and%20then%20coat%20the%20chicken%20completely.%20Place%20the%20cut%20up%20vegetables%20around%20chicken%20and%20add%20a%20little%20olive%20oil%20to%20any%20remaining%20butter%20paste%20in%20the%20bowl.%20Brush%20vegetables%20with%20the%20oil%20mixture.%20Lightly%20add%20salt%20and%20pepper%20to%20the%20vegetables%20as%20desired.%20(I%20started%20with%20the%20potatoes%20and%20carrots%20on%20the%20bottom.)%3C/p%3E%3Cp%3EInsert%20meat%20thermometer%20into%20the%20thigh%20meat%20away%20from%20any%20bone.%20Place%20pan%20in%20the%20oven%20and%20cook%20for%205%20minutes.%20Reduce%20heat%20to%20375%20degrees%20F.%20and%20cook%20for%20about%2060%20%20minutes.%20Tent%20a%20piece%20of%20aluminum%20foil%20over%20the%20chicken%20and%20continue%20cooking%20for%2030%20minutes%20or%20until%20internal%20temperature%20registers%20170%20degrees%20F.%20(breast%20meat%20should%20be%20165)%20Remove%20chicken%20to%20a%20platter,%20cover%20with%20foil%20and%20let%20rest.%3C/p%3E%3Cp%3EToss%20the%20vegetables%20in%20the%20pan%20drippings%20and%20return%20to%20the%20oven%20to%20cook%20for%20about%2015%20minutes.%3C/p%3E%3Cp%3ERemove%20from%20pan%20oven.%20Carve%20the%20chicken%20or%20cut%20into%20serving%20sections.%20Serve%20the%20vegetable%20on%20the%20side.%3C/p%3E){kind=link}
