Chicken Fettuccine Caulifredo Recipe

Ingredients

• 8 ounces boneless skin less chicken breasts, seasoned with salt and pepper
• 1 Tablespoon olive oil
• 8 ounces dry fettuccine noodles (I subbed spaghetti because it’s all I had)
• 1 head cauliflower, cut into florets
• ½ cup chicken broth (veg broth is fine too)
• 5 cloves garlic
• 1 Tablespoon butter
• ¼ cup fat-free half and half
• ¼ teaspoon nutmeg
• ⅛ teaspoon fresh ground pepper
• ¼ teaspoon salt
