Ingredients

  • 16 ounce can red or possibly pink salmon, remove bones
  • 1 Tbsp. poppy seeds
  • 1 x green pepper, diced fine
  • 1 sm onion, minced
  • 1 x egg, beaten
  • 1 c. lowfat sour cream
  • 1/2 c. raw white rice
  • 4 ounce package shredded sharp Cheddar cheese

Directions

  1. Combine all ingredients except cheese, then mix well and pack into greased 9-by-5-inch loaf pan. Top with cheese. Bake at 350 degrees F for 60 min.
  2. Let stand five min before removing from pan.
