  1. Cake:Combine oil and sugar; mix well. Sift together remaining dry ingredients.
  2. Sift half of dry ingredients in sugar mix and blend. Sift in dry mix remaining and Large eggs (one at a time) alternating them into sugar mix, mixing well after each addition. Add in carrots and mix. Add in pecans and pour into a lightly oiled pan (13 1/2x9-inches). Bake at 325 degrees for 35 to 40 min.
  3. Frosting:Beat all ingredients till creamy and spread on cooled cake.
