Ingredients

  • 1 can pineapple chunks (20 ounce) liquid removed
  • 1 can black beans (16 ounce) rinsed & liquid removed
  • 1 1/2 c. white rice cooked
  • 1 1/2 c. chicken breast cooked & cubed
  • 1 med bell pepper minced
  • 1/2 c. green onion minced

Directions

  1. Combine all ingredients in a bowl. Pour 1/2 c. of fat free or possibly light honey Dijon dressing and toss to coat.
  2. Makes 8 servings
