%3C/p%3E%3Cp%3EAsk%20Veg%20Baker,%20J.D.,%20The%20Thanksgiving%20Special,%20Continues!%3C/p%3E%3Cp%3EAs%20I%20mentioned%20in%20my%20last%20post,%20I%20am%20also%20bringing%20a%20tray%20of%20cookies.%20It's%20no%20real%20secret%20that%20I%20love%20to%20share%20desserts,%20but%20there%20is%20another%20practical%20reason%20for%20bringing%20dessert%20to%20a%20holiday%20or%20potluck%20dinner%20-%20when%20you've%20arrived,%20you're%20all%20done!%20No%20need%20to%20reheat,%20take%20up%20space%20in%20the%20kitchen,%20or%20worry%20that%20your%20dish%20is%20getting%20cold%20or%20messed%20up.%20You%20can%20deliver%20the%20final%20product,%20confident%20in%20its%20taste%20and%20presentation.%3C/p%3E%3Cp%3EThis%20year,%20I%20will%20be%20bringing%20three%20cookies%20on%20my%20tray:%20the%20chocolate%20caramel%20bars%20and%20sparkled%20ginger%20cookies,%20which%20I've%20previously%20written%20about,%20and%20a%20new%20cookie%20from%20Vegan%20Cookies%20Invade%20Your%20Cookie%20Jar:%20carrot%20cake%20cookies.%3C/p%3E%3Cp%3EWhy%20carrot%20cake%20cookies?%20A%20couple%20of%20reasons,%20actually.%20First,%20I%20love%20bringing%20cakes%20and%20cupcakes%20to%20parties,%20but%20sometimes,%20it's%20just%20not%20practical.%20When%20you've%20got%20a%20hankering%20for%20cake%20but%20the%20inability%20to%20deliver,%20I%20think%20these%20cookies%20are%20a%20good%20compromise.%3C/p%3E%3Cp%3EThese%20cookies%20are%20also%20great%20because,%20when%20fall%20rolls%20around,%20I%20feel%20like%20there%20are%20certain%20flavors%20I%20crave,%20including%20squash,%20pumpkins,%20apples,%20and%20root%20vegetables.%20I%20think%20carrot%20cake%20is%20perfect%20at%20this%20time%20of%20year%20because%20it%20incorporates%20carrots%20with%20all%20of%20the%20favorite%20Thanksgiving%20spices.%20It%20truly%20brings%20together%20the%20best%20of%20the%20season.%20The%20cookies%20are%20convenient%20because%20you%20get%20all%20of%20those%20flavors%20in%20an%20easy%20portable%20version.%3C/p%3E%3Cp%3EFinally,%20I've%20also%20got%20a%20selfish%20motive.%20Greg's%20favorite%20cake%20is%20carrot%20cake,%20but%20he%20rarely%20eats%20it%20because%20he%20hates%20cream%20cheese%20frosting,%20which%20is%20the%20typical%20topping%20on%20his%20beloved%20slice.%20I%20think%20his%20distaste%20for%20cream%20cheese%20frosting%20makes%20him%20a%20weirdo,%20even%20if%20he's%20a%20cute%20weirdo.%20:)%20That's%20neither%20here%20nor%20there,%20though,%20because%20cream%20cheese%20frosting%20is%20decidedly%20not%20vegan,%20and%20I%20haven't%20come%20up%20with%20a%20vegan%20frosting%20yet.%20What's%20a%20girl%20to%20do?%20Bring%20in%20the%20cookies!%3C/p%3E%3Cp%3EThe%20original%20recipe%20called%20for%20a%20lemon%20glaze%20frosting.%20I'm%20sure%20that's%20probably%20delicious%20and%20all,%20but%20I%20didn't%20make%20it,%20because%20I%20didn't%20think%20the%20cookies%20needed%20it.%20In%20addition,%20these%20cookies%20have%20the%20added%20bonus%20of%20tasting%20better%20when%20they've%20cooled.%20That's%20at%20least%20what%20my%20official%20cookie%20tester%20Greg%20told%20me,%20and%20I%20think%20there's%20something%20to%20that.%20When%20the%20cookies%20came%20straight%20out%20of%20the%20oven,%20he%20said%20they%20were%20good%20and%20had%20one.%20The%20next%20morning,%20he%20ate%20four%20more%20and%20in%20between%20mouthfuls%20said%20he%20thought%20they%20were%20irresistible%20at%20their%20%22equilibrium%22%20state.%20That%20said,%20if%20you're%20looking%20for%20a%20tasty%20dessert%20that%20doesn't%20need%20reheating,%20these%20cookies%20have%20mass%20appeal.%3C/p%3E%3Cp%3EHappy%20cooking%20and%20eating%20everyone,%20and%20most%20importantly,%20Happy%20Thanksgiving!%3C/p%3E%3Cp%3ECarrot%20Cake%20Cookies%20(adapted%20from%20Vegan%20Cookies%20Invade%20Your%20Cookie%20Jar)%3C/p%3E%3Cp%3EYields:%203%20dozen%20cookies%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E1)%20Combine%20soymilk,%20flaxseeds,%20oil,%20sugars,%20zest,%20and%20vanilla%20until%20well%20combined.%3C/p%3E%3Cp%3E2)%20Gradually%20add%20flour,%20baking%20powder,%20cinnamon,%20ginger,%20and%20nutmeg,%20and%20until%20just%20combined.%3C/p%3E%3Cp%3E3)%20Mix%20in%20carrots,%20coconut%20and%20raisins.%3C/p%3E%3Cp%3E4)%20Using%20an%20ice%20cream%20scoop%20or%20two%20spoons%20(two%20spoons%20are%20probably%20best;%20the%20dough%20is%20sticky%20and%20sometimes%20the%20scoop%20doesn't%20cooperate),%20scoop%20dough%20into%20little%20balls%20by%20the%20tablespoonful%20onto%20a%20cookie%20sheet%20covered%20in%20parchment%20paper.%3C/p%3E%3Cp%3E5)%20Bake%20in%20a%20preheated%20350%20degree%20oven%20for%2014-16%20minutes.%20Remove%20from%20oven%20and%20rest%20on%20baking%20sheet%20for%2010%20minutes%20before%20cooling%20on%20cooling%20racks%20completely.%3C/p%3E){kind=link}
