%20white%20from%20trees%20and%20snow.%3C/p%3E%3Cp%3EThese%20were%20bare,%20barren,%20exposed%20-%20its%20rocky%20innards%20just%20laying%20there%20in%20plain%20sight.%20%20%20It%20was%20as%20though%20the%20earth%20had%20used%20all%20the%20force%20it%20could%20muster%20to%20push%20itself%20up%20and%20out%20into%20the%20sky%20in%20this%20hot,%20parched%20landscape%20and%20was%20unable%20to%20cover%20up.%20%20No%20dermis%20of%20of%20greenery%20to%20be%20laid%20gently%20over%20it.%3C/p%3E%3Cp%3EAt%20first%20it%20was%20jarring%20to%20see,%20but%20it%20became%20beautifully%20defiant,%20challenging%20each%20person%20passing%20by%20to%20take%20the%20scene%20as%20it%20is.%20%20So%20boldly,%20so%20proudly%20standing%20there%20with%20nothing%20to%20hide%20behind.%3C/p%3E%3Cp%3EThese%20crab%20legs%20are%20quite%20the%20opposite%20of%20those%20brown,%20rocky%20mountains.%20Instead%20of%20being%20all%20out%20in%20the%20open,%20one%20must%20work%20at%20getting%20the%20inside%20free.%20%20Cracking%20open%20those%20shells%20to%20extract%20that%20sweet%20meat%20waiting%20patiently%20for%20release.%3C/p%3E%3Cp%3ETo%20celebrate%20the%20release%20of%20the%20meat,%20we%20made%20a%20trio%20of%20butters%20for%20dipping.%20%20Why%20three?%20%20Well,%20variety%20is%20the%20spice%20of%20life,%20as%20they%20say.%20One%20is%20a%20miso%20butter%20all%20salt%20and%20earthy.%20%20Another%20is%20a%20brown%20butter%20one,%20infused%20with%20ginger%20and%20notes%20of%20lemon.%20%20The%20third%20is%20a%20grapefruit%20one,%20accented%20with%20tangy%20yogurt%20and%20and%20the%20sweet%20anise%20taste%20of%20tarragon.%20%20Each%20bite%20of%20crab%20to%20be%20excavated%20out%20of%20its%20protective%20shell%20and%20dipped%20into%20one%20of%20the%20butters.%20%20Unlike%20the%20wide%20open%20California%20desert,%20the%20crab%20keeps%20its%20essence%20hidden%20away.%20%20It%20takes%20effort%20to%20get%20at,%20but%20it's%20definitely%20worth%20it.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EMiso%20Butter:%20Over%20low%20heat,%20gently%20melt%20butter%20with%20miso.%20%20Use%20a%20fork%20to%20work%20the%20miso%20into%20the%20butter.%20%20Remove%20from%20heat%20once%20melted.%3C/p%3E%3Cp%3EGingery%20Brown%20Butter:%20In%20large%20saute%20pan,%20add%20butter%20and%201%20tablespoon%20ginger.%20Melt%20then%20allow%20the%20butter%20brown,%20about%205-7%20minutes%20total.%20You%20will%20see%20brown%20specks%20that%20have%20formed%20on%20the%20bottom%20of%20the%20pan.%20Be%20careful%20to%20not%20burn%20the%20butter.%20%20Once%20browned,%20stir%20in%20the%20Meyer%20lemon%20juice,%20salt,%20agave%20nectar,%20and%20the%20remaining%20ginger.%3C/p%3E%3Cp%3ETarragon%20and%20Grapefruit%20Butter:%20Melt%20the%20butter%20gently%20over%20medium%20low%20heat,%20then%20stir%20in%20the%20remaining%20ingredients.%20%20Adjust%20salt%20and%20pepper%20to%20taste.%3C/p%3E){kind=link}
