Last week, a trio of Maui chefs brought their brand of modern aloha cooking to San Francisco.
And there was nary a macadamia-nut crusted mahi mahi to be seen.
Instead, Chefs Isaac Bancaco of Ka’ana Kitchen, Jeff Scheer of Maui Executive Catering, and “Top Chef” fan favorite Sheldon Simeon of Migrant, are part of the new wave of young chefs now adding a fresh spin to island cuisine by emphasizing local ingredients in dynamic preparations.

%20Maui%20tako%20garnished%20with%20piperade%20and%20the%20tang%20of%20goat%20cheese%20by%20Scheer.%20And%20squares%20of%20rye%20bread%20topped%20with%20blue%20cheese,%20honey%20and%20salted%20olives%20by%20Bancaco.%3C/p%3E%3Cp%3EChef%20Jeff%20Scheer%3C/p%3E%3Cp%3EChef%20Isaac%20Bancaco%20getting%20a%20hand%20plating%20his%20appetizer.%3C/p%3E%3Cp%3EChef%20Richie%20Nakano,%20who%20turned%20over%20his%20kitchen%20to%20the%20boys%20from%20Maui.%3C/p%3E%3Cp%3EScheer%20handled%20the%20first%20course,%20a%20dazzling%20crudo%20of%20onaga%20buried%20in%20a%20deep%20bowl%20with%20blood%20orange,%20cashew%20cream%20and%20pickled%20kumquats.%20Citrus,%20with%20its%20gentle%20acidity%20and%20brightness,%20is%20always%20a%20perfect%20match%20with%20raw%20fish.%20This%20was%20everything%20you%20wanted%20an%20opening%20dish%20to%20be%20%E2%80%94%20hitting%20all%20the%20high%20points%20and%20perking%20up%20the%20palate.%3C/p%3E%3Cp%3ESimeon%20took%20the%20next%20course,%20a%20riff%20on%20sinigang,%20the%20tamarind-infused%20stew%20of%20his%20Filipino%20heritage.%20This%20one%20was%20reborn%20with%20lightness%20%E2%80%94%20the%20usual%20pork%20replaced%20with%20Kauai%20prawns.%20Barley%20added%20nuttiness%20%20and%20texture%20along%20with%20tare%20peanuts,%20boiled%20until%20crunchy-soft.%20The%20broth%20was%20savory%20and%20just%20tangy%20enough%20without%20taking%20over%20the%20dish.%3C/p%3E%3Cp%3ECaptivating%20crudo.%3C/p%3E%3Cp%3EBarley%20and%20shrimp%20sinigang.%3C/p%3E%3Cp%3EBancaco%20followed%20with%20%E2%80%9CAhi%20and%20Anchovy,%E2%80%9D%20possibly%20my%20favorite%20dish%20of%20the%20dinner,%20not%20only%20because%20of%20its%20flavors,%20but%20because%20it%20exemplifies%20the%20direction%20new%20Hawaiian%20cuisine%20is%20taking.%20Who%20hasn%E2%80%99t%20had%20his%20fill%20of%20seared%20ahi,%20particularly%20dredged%20in%20sesame%20seeds?%20Bancaco%20recasts%20that%20mundane%20dish%20by%20accentuating%20the%20rich,%20meaty,%20red%20brick%20of%20salmon%20with%20the%20punch%20of%20chopped%20anchovies%20mixed%20with%20bacon,%20and%20a%20dab%20of%20whole-grain%20mustard.%20It%E2%80%99s%20a%20dish%20so%20good%20that%20people%20around%20me%20were%20wishing%20for%20seconds.%3C/p%3E%3Cp%3EAhi%20and%20anchovies%20%E2%80%94%20sheer%20brilliance.%3C/p%3E%3Cp%3ENakano,%20after%20spying%20in%20the%20walk-in%20all%20the%20Maui%20pineapples%20the%20chefs%20had%20brought%20in,%20decided%20to%20take%20a%20turn%20with%20dessert.%20He%20churned%20it%20into%20sorbet,%20garnished%20with%20chewy,%20sweet%20pieces%20of%20caramelized%20pineapple%20and%20coconut%20cookie%20crumbles.%20It%20was%20the%20taste%20of%20the%20tropics%20in%20winter%20in%20San%20Francisco.%3C/p%3E%3Cp%3EA%20sweet%20taste%20of%20Hawaii.%3C/p%3E%3Cp%3ESince%20I%20was%20with%20my%20husband,%20Meat%20Boy,%20dinner%20didn%E2%80%99t%20quite%20end%20there.%20Well,%20it%20did%20for%20everyone%20else.%20But%20we%20actually%20ended%20up%20ordering%20two%20dishes%20off%20Nakono%E2%80%99s%20regular%20menu.%20Yes,%20after%20we%20finished%20dessert.%3C/p%3E%3Cp%3EI%E2%80%99m%20so%20glad%20we%20did,%20too.%20Because%20one%20cannot%20leave%20Hapa%20Ramen%20without%20trying%20the%20Buttermilk%20Fried%20Chicken%20Buns%20($4%20each).%20To%20do%20so%20would%20be%20a%20crime%20%E2%80%94%20or%20at%20the%20very%20least%20a%20regrettable%20decision%20not%20easy%20to%20recover%20from.%20I%20cannot%20say%20enough%20about%20these%20Chinese%20steamed%20buns%20that%20cradle%20Southern-style%20fried%20chicken%20battered%20with%20a%20definite%20crunch.%20House-made%20bread%20and%20butter%20pickles,%20a%20little%20sweet,%20a%20little%20sour,%20and%20chili-spiked%20mayo%20get%20tucked%20inside,%20too.%20Nakano%20says%20some%20customers%20come%20in%20for%20just%20cocktails%20and%20those%20buns.%20It%20really%20is%20the%20perfect%20nosh%20%E2%80%94%20a%20mash-up%20of%20cultures%20and%20geographic%20regions%20that%20meld%20together%20so%20effortlessly%20you%20think%20they%20were%20always%20one.%3C/p%3E%3Cp%3EOMG.%3C/p%3E%3Cp%3ENakano%20takes%20the%20method%20his%20Mom%20uses%20for%20ribs%20%E2%80%94%20and%20puts%20his%20own%20spin%20on%20it.%3C/p%3E%3Cp%3EBaby%20back%20ribs%20($12)%20come%20piled%20with%20a%20julienne%20of%20watermelon%20radish%20drizzled%20with%20fish%20sauce,%20reminiscent%20of%20the%20pickled%20carrots%20and%20daikon%20shards%20de%20rigueur%20on%20banh%20mi%20sandwiches.%20The%20ribs%20are%20first%20brined,%20then%20simmered%20in%20their%20brine%20before%20being%20deep-fried.%20The%20result%20is%20tender%20meat%20with%20a%20subtle%20crispiness%20on%20the%20edges.%3C/p%3E%3Cp%3EAfter%20that,%20we%20were%20done%20for%20the%20evening.%20Really.%3C/p%3E%3Cp%3EBut%20wishing%20every%20day%20could%20transport%20us%20to%20Maui%20in%20the%20Mission.%3C/p%3E%3Cp%3EMore:%20A%20Visit%20to%20Migrant%20Restaurant%20in%20Maui%3C/p%3E%3Cp%3EAnd:%20A%20Visit%20to%20Ka%E2%80%99ana%20Kitchen%20in%20Maui%3C/p%3E%3Cp%3EAnd:%20Take%20Five%20with%20Chef%20Sheldon%20Simeon%3C/p%3E%3Cp%3EShare%20and%20En
