Ingredients
- One box of Gluten Free graham crackers
- 1/4 tsp. cinnamon
- 3 tbsp. butter â melted
- 2 tbsp. sugar
- 1 block cream cheese â be careful using store brands, Philadelphia cream cheese is GF
- 1/3 cup powdered sugar
- 2 lemons â just the juice
- 1/2 cup ricotta cheese
- 1-2 cups fruit of choice â I used a container of blueberries

%3C/p%3E%3Cp%3EBut%20I%20wanted%20to%20try%20something%20new%20for%20dessert.%20Good%20idea.%3C/p%3E%3Cp%3E10%20minute%20Cheesecake%20Mousse!%3C/p%3E%3Cp%3EIt%20tastes%20like%20a%20cheesecake,%20with%20a%20sweet-tangy%20filling%20and%20a%20buttery%20graham%20cracker%20crust.%20The%20only%20difference%20is%20you%20don%E2%80%99t%20bake%20it%20and%20it%20takes%20mere%20minutes%20to%20whip%20up!%3C/p%3E%3Cp%3EOH%20and%20I%20left%20out%20the%20gluten%20for%20us%E2%80%A6You%E2%80%99re%20Welcome%20Who%20needs%20it!%3C/p%3E%3Cp%3E10%20Minute%20Cheesecake%20Mousse%20%E2%80%93%20gluten%20free%3C/p%3E%3Cp%3EYou%E2%80%99ll%20need:%3C/p%3E%3Cp%3EStart%20with%20the%20crust.%20You%20could%20use%20Kinnikinnick%20GF%20graham%20crackers%20or%20Schar%20GF%20Honeygrams.%20You%20could%20even%20use%20a%20GF%20gingersnap%20or%20chocolate%20cookies.%3C/p%3E%3Cp%3EI%20used%20the%20Schar%20Honeygrams%20because%20they%20were%20what%20I%20had%20on%20hand.%3C/p%3E%3Cp%3EIn%20a%20food%20processor,%20process%20your%20cookie%20base%20until%20you%20have%20crumbs.%3C/p%3E%3Cp%3ETransfer%20into%20a%20large%20bowl%20and%20stir%20in%203%20tbsp.%20melted%20butter,%202%20tbsp.%20sugar,%20and%201/4%20tsp.%20cinnamon.%20The%20cinnamon%20adds%20a%20real%20depth%20to%20the%20base,%20but%20if%20you%20use%20a%20different%20cookie%20than%20a%20honey%20graham%20%E2%80%93%20omit%20the%20cinnamon.%3C/p%3E%3Cp%3EStir%20until%20evenly%20coated%20and%20then%20spread%20half%20of%20the%20cookie/butter%20base%20into%20your%20serving%20dish.%3C/p%3E%3Cp%3ENOTE:%20You%20could%20make%20individual%20cups%20like%20in%20the%20picture%20at%20the%20beginning%20of%20this%20post,%20or%20you%20can%20make%20one%20large%20dish.%20Whatever%20you%E2%80%99d%20like.%20I%20actually%20made%20both%20on%20Saturday.%3C/p%3E%3Cp%3ESo%20spread%20half%20the%20cookie/butter%20base%20evenly.%20And%20reserve%20the%20other%20half.%3C/p%3E%3Cp%3EIn%20your%20food%20processor,%20add%20in%20one%20block%20of%20cream%20cheese%20and%201/3%20cup%20powdered%20sugar.%20I%20find%20it%20easier%20to%20process%20if%20you%20cut%20your%20block%20of%20cheese%20into%20chunks.%20Process%20until%20smooth.%20Add%20in%201/2%20cup%20ricotta%20cheese%20and%20the%20juice%20from%202%20lemons.%20Process%20until%20smooth.%20You%20now%20have%20your%20cheesecake%20mixture.%3C/p%3E%3Cp%3ESpread%20half%20of%20your%20cheesecake%20mixture%20onto%20your%20graham%20cracker%20base.%3C/p%3E%3Cp%3ESpread%20evenly,%20working%20from%20inside%20out%20to%20keep%20the%20graham%20cracker%20from%20mixing%20in%20to%20your%20cheesecake%20layer.%3C/p%3E%3Cp%3ENow%20add%20a%20layer%20of%20the%20berries%20of%20your%20choice.%20I%20chose%20blueberries.%3C/p%3E%3Cp%3EThen%20add%20a%20layer%20of%20your%20second%20half%20(the%20reserve)%20of%20graham%20cracker,%20covering%20the%20fruit.%3C/p%3E%3Cp%3EThen%20add%20your%20last%20layer%20of%20cheesecake%20mixture,%20again%20spreading%20from%20the%20inside%20out.%20And%20then%20top%20with%20fruit.%3C/p%3E%3Cp%3EChilling%20in%20the%20fridge%20for%20at%20least%20an%20hour%20is%20best,%20but%20it%20tastes%20delicious%20right%20away.%20The%20texture%20right%20away%20is%20more%20like%20pudding%20and%20if%20you%20let%20it%20set%20for%20an%20hour%20or%20so%20the%20texture%20firms%20up%20in%20to%20more%20of%20a%20mousse.%3C/p%3E%3Cp%3ESo%20dang%20good!%3C/p%3E%3Cp%3EI%20think%20it%20would%20be%20super%20cute%20to%20layer%20this%20dessert%20in%20small%20single%20serving%20mason%20jars%20and%20serve%20them%20at%20a%20party!%3C/p%3E%3Cp%3EOr%20just%20eat%20it%20straight%20from%20the%20bowl%E2%80%A6%20both%20work!%3C/p%3E%3Cp%3ESpeaking%20of%20work%E2%80%A6I%E2%80%99m%20back%20at%20One%20World%20Market%20today!%20My%20organization%20was%20nice%20enough%20to%20have%20me%20back%20to%20work%20during%20my%20school%20break!%20Parrish%20and%20I%20are%20so%20thankful%20for%20the%20opportunity%20to%20supplement%20our%20single%20income%20and%20I%E2%80%99m%20excited%20to%20see%20everyone!%3C/p%3E%3Cp%3EHappy%20Monday!%3C/p%3E){kind=link}
