%3C/p%3E%3Cp%3ESpaghetti%20tagliuzzati%20con%20zuppa%20di%20aragosta%3C/p%3E%3Cp%3ELobster%20and%20pasta:%20it%20sounds%20so%20simple,%20doesn%E2%80%99t%20it?%20And%20doesn%E2%80%99t%20it%20sound%20like%20the%20epitome%20of%20the%20springtime%20or%20summer%20meal,%20something%20to%20enjoy%20after%20a%20nice%20day%20at%20the%20beach,%20perhaps%20served%20with%20a%20refreshing%20beer%20or%20glass%20of%20white%20wine?%3C/p%3E%3Cp%3EOh,%20were%20it%20so%20simple.%20The%20truth%20of%20the%20matter%20is%20that%20this%20is%20a%20dish%20that%20demands%20patience.%20Not%20only%20does%20it%20take%20some%20work%20to%20get%20all%20of%20the%20components%20ready,%20but%20it%E2%80%99s%20one%20that%20requires%20you%20to%20wait%20until%20the%20ingredients%20are%20in%20season%20because%20anything%20otherwise%20would%20result%20in%20a%20less-than-stellar%20meal.%20I%20knew%20this%20when%20I%20first%20saw%20the%20recipe%20in%20Made%20In%20Sicily%20months%20ago,%20so%20I%20abstained%20from%20even%20thinking%20about%20it.%20But%20then%20Memorial%20Day%20weekend%20came,%20and%20Michael%20was%20home%20after%20a%20long%20week%20in%20England,%20and%20Fairway%20had%20lobster%20on%20sale.%20Even%20the%20tomatoes%20smelled%20delicious,%20despite%20it%20not%20quite%20being%20peak%20tomato%20season%20just%20yet%20in%20our%20neck%20of%20the%20woods.%3C/p%3E%3Cp%3EIn%20short:%20I%20waited%20long%20enough%20to%20have%20this,%20and%20to%20borrow%20a%20phrase%20from%20Alton%20Brown,%20my%20patience%20was%20going%20to%20be%20rewarded.%3C/p%3E%3Cp%3EYes,%20you%E2%80%99re%20going%20to%20work%20for%20this%20dish,%20as%20it%20involves%20making%20lobster%20broth,%20cooking%20lobster%20meat,%20trying%20to%20bust%20through%20lobster%20claws%20to%20get%20to%20said%20meat,%20and%20bring%20it%20all%20together%20with%20some%20tomatoes%20and%20pasta%20in%20a%20separate%20pan.%20But%20the%20work%20involved%20is%20very%20much%20worth%20the%20effort:%20maybe%20it%E2%80%99s%20simply%20because%20you%E2%80%99ve%20been%20on%20your%20feet%20juggling%20all%20of%20the%20various%20components,%20but%20when%20you%20sit%20down%20with%20a%20bowl%20of%20of%20lobster%20and%20pasta%20in%20front%20of%20you,%20every%20last%20bite%20is%20extremely%20satisfying.%3C/p%3E%3Cp%3EBesides%E2%80%93a%20little%20wine%20always%20helps%20in%20soothing%20some%20sore%20feet.%3C/p%3E%3Cp%3ELobster%20Soup%20with%20%E2%80%9CShredded%E2%80%9D%20Spaghetti,%20or%20Spaghetti%20tagliuzzati%20con%20zuppa%20di%20aragosta%3C/p%3E%3Cp%3EAdapted%20from%20Made%20in%20Sicily%3C/p%3E%3Cp%3EServes%204,%20or%20two%20with%20generous%20leftovers.%3C/p%3E%3Cp%3EFirst,%20you%E2%80%99re%20going%20to%20have%20to%20dispatch%20of%20the%20lobster:%20Made%20in%20Sicily%20recommends%20that%20you%20place%20the%20lobster%20in%20the%20freezer%20for%20about%20fifteen%20minutes%20before%20you%20plan%20to%20use%20it%20in%20order%20to%20put%20it%20into%20a%20sort%20of%20stupor.%20You%E2%80%99ll%20then%20take%20it%20out,%20place%20it%20on%20a%20cutting%20board,%20and%20while%20using%20a%20sharp%20knife%20you%E2%80%99ll%20cut%20the%20head%20in%20half,%20not%20far%20behind%20the%20eyes.%20The%20book%20insists%20that%20it%20is%20the%20most%20humane%20way%20to%20do%20this,%20and%20well,%20all%20I%20can%20say%20is%20that%20it%20is%20expedient.%20Pull%20the%20tail%20and%20claws%20off,%20and%20then%20cut%20the%20lobster%20head%20and%20thorax%20in%20half.%20Separate%20this%20from%20the%20tail%20and%20the%20claws,%20as%20this%20will%20be%20used%20to%20make%20the%20broth.%3C/p%3E%3Cp%3EIn%20a%20small%20pot,%20blanch%20the%20tail%20for%20about%2020%20seconds,%20and%20blanch%20the%20claws%20for%20a%20good%20two%20minutes,%20because%20otherwise%20you%20will%20be%20struggling%20to%20get%20the%20shell%20off%20of%20the%20claw%20meat%20like%20we%20did.%20Remove%20the%20claw%20meat%20from%20the%20shell,%20and%20cut%20the%20tail%20in%20half%20to%20get%20two%20sides%20and%20remove%20the%20meat.%20Chop%20all%20of%20the%20meat%20roughly%20and%20set%20aside.%3C/p%3E%3Cp%3EThen,%20using%20a%20large%20pot,%20heat%20two%20tablespoons%20of%20the%20olive%20oil%20over%20low%20heat%20and%20sweat%20the%20vegetables,%20bay%20leaf,%20and%20parsley%20until%20the%20vegetables%20are%20golden%20and%20soft.%20Add%20the%20reserved%20lobster%20head%20halves%20and%20the%20grated%20tomato%20and%20cook%20for%20an%20additional%203%20minutes.%20Add%20enough%20water%20to%20cover%20everything%20and%20simmer%20for%2020%20minutes,%20and%20then%20strain%20the%20broth%20through%20a%20mesh%20strainer%20and%20set%20aside.%20(We%20kept%20it%20on%20low%20simmer.)%20Save%20the%20lobster%20heads%20as%20there%20is%20still%20good%20meat%20there%20to%20eat!%3C/p%3E%3Cp%3EClean%20the%20pot%20you%20used%20to%20make%20the%20stock%20and%20now%20use%20it%20to%20boil%20water%20for%20pasta.%20Salt%20it%20generously,%20add%20the%20pasta,%20and%20cook%20for%20at%20least%20a%20minute%20or%20two%20less%20than%20prescribed%20on%20the%20package.%20Reserve%20a%20little%20pasta%20water%20in%20case%20you%20need%20it%20later,%20and%20then%20drain.%3C/p%3E%3Cp%3EWhile%20the%20water%20is%20heating%20up%20and%20the%20pasta%20is%20cooking,%20start%20the%20final%20pan%20sauce:%20add%20a%20tablespoon%20of%20olive%20oil%20to%20the%20pan%20and%20bring%20to%20a%20medium%20heat.%20Add%20the%20fresh%20chile%20pepper,%20and%20cook%20for%20a%20minute%20or%20so,%20and%20then%20and%20the%20chopped%20lobster%20meat%20to%20the%20pan%20and%20cook%20for%20a%20few%20more%20minutes.%20Add%20the%20white%20wine%20and%20let%20it%20cook%20out%20for%20a%20bit,%20and%20then%20add%20the%20chopped%20tomatoes%20and%20the%20lobster%20stock.%20When%20the%20pasta%20is%20drained,%20add%20it%20to%20the%20pan%20and%20toss%20well%20for%20about%20a%20minute.%20A%20little%20cooking%20water%20will%20loosen%20things%20up%20if%20necessary.%20Then%20add%20the%20parsley%20and%20garlic%20and%20a%20little%20more%20olive%20oil%20to%20finish,%20toss%20again,%20and%20serve.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
