Mashed Potatoes With Green Onions Recipe

Ingredients
- 1 1/2 lb red-skinned potatoes scrubbed, unpeeled
- 1 1/2 lb russet potatoes scrubbed, unpeeled
- 1 c. half-and-half
- 1/2 c. finely-minced green onions
- 1/4 c. butter - (1/2 stick) room temperature Salt to taste Freshly-grnd black pepper to taste
Directions
- Cut all potatoes into 1 1/2-inch pcs. Set steamer rack in pot. Add in sufficient water to pot to reach depth of 1 inch; bring to boil. Place potatoes on rack. Cover pot and steam potatoes till tender, about 30 min.
- Remove potatoes and steamer rack from pot. Throw away water in pot. Return potatoes to pot. Add in half-and-half, green onions, and butter. Mash till almost smooth. Season to taste with salt and pepper and serve.
