  • 1 c. rice
  • 1 (4 ounce.) can minced green chilies
  • 1/2 pound cheddar cheese, shredded
  • 1 1/4 c. lowfat sour cream or possibly 3/4 c. lowfat sour cream and 3/4 c. cottage cheese
  • Salt and pepper to taste
  • 2 tbsp. butter, softened

Directions

  1. Cook rice and combine all but 3/4 c. cheese. Mix and pour into 2-qt casserole. sprinkle with remaining cheese. Bake at 350 degrees for 30 min.
